I realize I was being unclear, but by 'no fiber' I was referring to a lack of items that are primarily eaten for fiber, like a leaf or bean of some kind, not a literal lack of fiber in the meal. The primary source of fiber in this meal being the potato is, from personal experience, going to lead to some pretty terrible and unbalanced bowel movements lol

Russet potatoes shouldn't sit in your stomach like a brick. They are high in fiber, they have almost as much fiber as broccoli, turnip greens, and Brussels sprouts. All these have about 1/3rd as much fiber as black beans. So a large potato has as much fiber as half a cup of black beans. If potatoes wreck your GI tract, that's a you problem, not a normal problem.
I love sweet potatoes :) I am a huge advocate LOL. They helped a lot when I needed to get more fibre in. They go great in soups or just roasted or steamed, or pureed and added to stuff like soup or protein ice cream. deviled, takes long and must cool down
hollandaise, will taste like eating straight mayo (also relatively hard to make)
my point being, there are obviously a million better ways to cook eggs, but boiling them in water is just the easiest, simplest one (though it's mostly a tie between boiling and frying, it's the cleaning up after that makes it 2nd place)
