Seared in butter for 2 minutes per side, then instant pot for 7 minutes, natural release. Internal temp at 160 in thickest portion, so may have overcooked a little. Still edible, will try again in a few days.

Steven is a miniature Australian Shepherd. He is not high energy. He has adapted to the truck. He'll still go play fetch and do everything else but one or two good thorough walks is all he needs for the day. He's happy to cuddle and snuggle. He's kind of lazy.

I can cook a lot of things quite well and pork loin ain't one of them. It's always dry and well dry. That looks good.

That pork loin looks perfectly seared! Honestly, with a "supervisor" like Steven watching your every move from the floor, the pressure to nail the cook must have been intense. If he's giving it the stamp of approval, you definitely did something right. Just be careful—once they know you can cook like that, they start expecting a seat at the table!

Put olive oil and seasonings on top, then put in oven at 375 for 45-50 mins. 😘
