I love crazy DYI builds that most people would say is stupid/unnecessary
Currently on my build I'm running a 48V to 5V adapter that powers front/rear cameras and a gps tracker that uses cell towers (as opposed to airtags). I also am trying to get this 120V inverter wired in to power small appliances (so far I got a TV running during a power outtage and fast charged a laptop/phone all from the bike's main battery) but its a little too sketchy to ride with at the moment.

You can get an inverter and use it to power stuff in your van or run powertools if you're building trail features

I have a modest 1000W inverter but I want to print an enclosure for it before I start to ride around with it.

I'm using a phone mount that connects to to the 52v and provides a standard USB A port that I use to power a dash cam on the front of the bike.

i need to get a fender for my front wheel (saddle bags on the rear seem to be keeping the water/mud off me pretty well)

Both me and my son have the USB (5v) adapter built in to our ebikes. We can charge our phones and basically use anything that has a USB connection.
The only modifications we have made is to add LED lights to the tyres.

the 5V adapters are great, unfortunately I have so much stuff plugged into this one that charging my phone would take about 18 hours from empty. I'd like to find a solution that would support fast charging.
