What specs are good for a cheap, yet efficient gaming pc?

I'm looking into building a pc this summer, and I want something that runs pretty well. So, as of now, I'm doing some gaming, some Blender, some Roblox studio, that sort of thing. My current computer I'm doing things on is the 2021 iMac, with 8Gb of Ram, and a M1 chip I believe. It works pretty well, but seems to overheat and stutter when I have multiple applications open, or try to do anything more than the bare minimum.
So my question is, what specs are good? I have no idea whatsoever what I'm doing, or what I should look for, but I would like something that runs at least a bit better. Do I want an RTX 4060? or is 5060 better? how much Vram?
I am aiming for a 1440p 27 in monitor, do I need something special for that? Is that even a good monitor?
Ultimately I don't have the foggiest idea of what I'm doing, and need some assistance in choosing what works better than my current setup, but is still a reasonable price. My budget is around 1200 USD dollars.

You could get 5060ti 16 gigs and 7500x3d and 16 gigs of ddr5 6000mhz ram too all under 1200 bucks it's super solid

Id recommend the intel core 250k around $220 or 270k, around $330 both are really good cpus, nothing beats them price to performance, gpu sorta depends, I sometimes hear its good to spend 50% of your budget on the gpu, Im useing 4060ti for my new build, thing is the 40 and 5060 ti are basically identical, amd is definitely worth looking at, but dosent have as good performance for some programs like blender, but they are generally better value.
