Yeah, but then you have the occasional exception that proves the rule. Like that Daytona Coup that was daily driven by Phil Specter before everyone realized he was a crazy murderer.
I lived in the mountains above Woodside, California. Local guy would show up to Alice's restaurant in a GT40. IIRC, it was one that actually raced at Le Mans. What I do vividly remember was watching him put the steering wheel on while getting in it, and rolling away that mfer was L-O-U-D.
I highly doubt that someone is driving around an original track used GT40 just to go for a casual lunch/dinner.
They're multi-multi million dollar cars if its an original race chassis.
Either that owner bought one of the homologation street cars, still rare and costs a lot but far easier to believe than the handful of race cars that still exist.
Its also a possibility, more than likely, that its a replica kit car. You can order them for around $150-200k for a pre-built one from like Superformance with a carb'd 427 Cobra Jet and open headers.
I mean its still possible that it could be original - Rowan Atkinson's McLaren F1 is around $15million+ (probably closer to $30mil now) and he drives it once in a while.

Considering Chassis 1075 is the first car to win 2 LeMans Ina row, is owned by a member of the Walton family (they own Walmart), and the last confirmed sighting of it was at Goodwood in 2023, I'm gonna go ahead and say no.

Not all are velvet roped, some still use them on track. It’s a beautiful sound to hear. Been to multiple tracks with both of them a few times.
