Black beans, diced tomatoes, diced jalapeños, and corn, all canned. Plus some taco seasoning and also some shredded "mexican style" cheese from the freezer. After this picture I added more spices and it's quite a bit better. Still looks like shit though

Unfortunately canned diced tomatoes don’t have the same quality as fresh diced tomatoes.
I think if I were you, next time I would put the canned tomatoes and jalapeños in a blender with some spices, salt and lime juice and blitz it into a liquid salsa. If you have one. If not you can achieve the same thing with more time by cooking them down in a saucepan and mashing them and letting it cool. Or mortar and pestle. Then just dip the nachos into that. Might trick your brain into being better than canned vegetables on chips.
I have made MANY a “I’m out of most food so it’s pantry nacho night” in my time lol.

I usually just make liquid nacho cheese and dip the tortilla chips in it, but I wanted to try something different (plus the chips were stale and I thought baking them would help.) Not gonna try this again

I have found it impossible to make the correct amount of nachos. I don’t account for the mass of the extra stuff added on top of the chips and it’s too much every time. And nachos make awful leftovers.
But yeah I’m talking nachos on a single plate. This is way too much right from the start. And it doesn’t look like much extra stuff was added.
