I'd really love a reddit page for trucker cooking. Each post would have to include what equipment was used along with the recipe. Bonus if it includes a picture. Even if meals are cooked at home, frozen and reheated later.

I just eat quinoa with tuna and these veggie packs very filling very easy. I skip breakfast most the time and for lunch i get some hard boiled eggs , greek yogurt , and some kinda tuna fish sandwich or some other sandwich. I walk a mile at the end of my shift everyday. And do a small work out in the mourning everyday, its kept me lean for 3 yrs now only weigh 10 pounds more than when i started trucking.

That's solid combo right there! I do similar thing but with lentils instead of beans sometimes - they cook faster when you're in hurry and still give you that protein hit. Been experimenting with adding some canned salmon to rice bowls lately too, gives it more flavor than plain tuna and the omega-3s help with staying alert during long drives. Only problem is finding decent canned fish at truck stops, most places only have the basic stuff that tastes like cardboard

Yeah man, instant pot is gold. Can make a whole roast with vegetables and everything in like 2 hrs. I’d just grab shit at Walmart half way through my day and toss it all in with 2-3 hours left to drive.
You can make thanksgiving feasts everyday with that fckr.
Otherwise I’d just do rice and veggies in the microwave and grab a rotisserie chicken.

Usually make a big ass fajita chicken pasta bake on my home time. Enough to cover lunch breaks for the 7 days im on. Rough macros is like 45g of protein(little over 50g if I decide to spend extra for the protein pasta), 12g of fat, 25g carbs and around 450-500 calories. Its nice and creamy, can mix low fat Greek yogurt and low fat cream cheese with some fire roasted crushed tomatoes as the "sauce" to keep it from being dry.

After all these years on the road, I've developed several physical and mental health issues. So I decided to go on a diet. It's a pretty simple diet really, just a handful of rat poison a day.... It's been working okay, but I haven't gotten the results I've been looking for yet though.

I make hamburgers with lettuce buns. Ground beef steamed zucchini broccoli mushrooms and marinara sauce. And on the last load home usually steak rice and steamed asparagus.

pasta salad was a common one for me otr. used to pressure cook boston butts, too. dont miss it lol.
