I am trying to spread my wings in the culinary department, but find myself sticking to about four or five similar meals

If I’m feeling fancy I will make a ragu with beef shin in the pressure cooker, use a little more red wine than usual, rosemary and then shred the beef shin.
A delicious, hearty upgrade on an already great meal.

Onion fry it off still soft with salt on them, add garlic quick fry don’t burn. Add mince any kind for me pork beef or turkey. Add stock, bay leaves chopped tomatoes add a pinch of salt to reduce the acidity water if it’s too thick. Cook for 10 mins or so add basil and oregano and nutmeg cook them through for a few mins and done oh take the bay leaves out. I also cook the spaghetti drain it then put back in the pan with a knob of butter. I think that’s all oh could add carrots With the onions as they take a while to cook.

This is NOT a promotion, but we tried a couple of the ingredients delivery companies. We finally settled on Gousto because I found the instructions simpler to follow.
Although they aren't dirty cheap, at least you aren't scouring the shops for unusual ingredients that you'll use a spoonful of once and then never use again.
I'd recommend them to anyone who really wants to expand their repertoire.

We used Gousto when we had our first born as meal planning and food prep dropped right off our priority list when trying to keep a tiny human alive and operating on a few hours of sleep.
We found it much better than similar companies for the reasons you mention. The other benefit is many of the recipes use common ingredients with just a bit of variation on herbs, spices etc. Keep the recipe cards in the little binder and you can make them over and over again!
We haven't used Gousto for a number of years now as we have a little more free time and aren't as sleep deprived but on average at least 2 meals a week are Gousto recipes.

I don't exactly have a "go-to'" meal as such, but these days I find if I don't know what to cook and I've got a bunch of random ingredients in the fridge, I'll often end up making some kind of risotto. Although I'm sure many Italians would throw up their hands in horror at some of my "clear out the fridge" risottos, lol!
Part of the reason I make risottos so much is a have a child who is very particular about food, but who will generally eat a risotto unless it's mainly mushrooms or something else they don't like (although I can put a bit of mushroom in there if it's either chopped small or in very big chunks that can be fished out!).
In the past I'd say some form of curry would be my "go-to" meal, but I have since developed a nightshade intolerance so can't do things like tomato and chilli anymore, which makes curries harder (although not impossible, just more limited in scope or more complicated to make them taste really good).

Curry, saag, various Indian dishes. Thai red or green curry. Japanese curry. Chilli (usually with rice but sometimes I'll add pasta near the end for chilli mac and cheese). Chicken and rice. Fried rice. Risotto. Stir fry. Tofu scramble. Bangers and mash. Quesadillas. Omelette. Jacket potato or egg and chips when lazy.

Pork mince. 5 pounds a kilo. Cut it with green lentils, onion, veg, stock, gravy I cook it in 20 - 39 portion batches and cook potato and carrots on the day.

I do a mean Marcella Hazan roast chicken with two lemons - awesome recipe, but my major Brit meal would be Toad in the Hole - with crispy roast spuds rather than mash, and veg. Universally loved, but less frequent now my wife is Fast 800 obsessed.

I try to cook or eat something different every night or other night depending on how much food I've made.
I try to make a conscious effort not to have meat in every meal, it's not necessary even if it's delicious.
A basic curry is pretty easy and can he varied with a simple change to the spices or the protein/veg.
Tacos and their fillings are often quite simple, quick to make and utterly delicious.

British-Indian style curry. I make batches of base gravy and keep them in the freezer so that I can make a variety of curries nice and quickly. My current favourite is chicken dopiaza.

Some sort of pilaf. I. E. A boiled rice dish.
Fry up some stuff, add some spices, chuck in a measure of rice and double the amount of stock.
Cover it, 10-15 minutes until the stock has all absorbed and the rice is cooled, and you have a nice hot meal.
I make this at lunch when working from home all the time, because I can cook for ten mins, leave it for 15 mins while I do something else, and then I have a meal.

I do like a bit pot of food that provides leftovers. Stews, curry, chilli, casserole, that kind of thing. I like eating out of bowls rather than on a dry plate with a knife and fork if that makes sense.

Dovedale is a type of cheese, a bit like Wensleydale or you can use any other kind of cheese you like (blue cheese works well with the beetroot)
Yorkshire pudding pizza is something I make due to food allergies in the family - can’t use ordinary pizza bases or bread as the base but I can make a giant (lactose & gluten free) Yorkshire pudding which I can use as the base (or an ordinary giant sized yorkshire if you don’t have allergies). Once the yorkshire is cooked spread your choice of tomato/bbq sauce on top, add whatever toppings you want (e.g. ham & pineapple/pepperoni/etc) then add grated cheese (lactose free if needed) & bake in the oven for 25-40m depending on toppings & you have individual size personalised ‘pizza’

Depends what I've batch cooked. Currently in my freezer I've got portions of chicken, spinach and coconut curry, and always have microwave sachets of basmati rice. I've also got individual frozen portions of bolognese
Been having a kitchen potter day, got my spring head on. Made ras el hanout spiced hummous, courgette (zucchini, I'm english, we say courgette)polenta and feta bread, giant couscous with finely chopped red onion, fresh parsley and mint with lemon zest, and fried courgettes with chickpeas and finely sliced onion and garlic braised in sherry vinegar, to which I'll add feta and chopped sundried tomatoes when it's cooled. That'll keep me going for a while. I'll probably marinade some chicken to have with salads for a change
