just do it without. Liangban doufu vs pidan doufu. It's cold tofu with doubanjiang (why not put soybean on your soybean), sesame oil, soy sauce, garlic, and scallions (liangban). Adding the century eggs makes it pidan.

I do it with extra firm tofu, chopped spring onion, sesame oil, sichuan peppercorn oil, white pepper, and you can mix and mold it with a gloved hand. The texture is amazing.

Hiyayakko or yakko-dōfu is a Japanese dish which is just a diced brick of cold tofu with stuff on it. It’s a classic hot weather dish just like zarusoba. I like it with grated ginger, green onions, katsuobushi, and sometimes chili oil or chili flakes.

Funny story - I eat tofu a lot because I’m vegetarian, my husband and 2yo son are not but my son loves tofu.
Anyway last night, I made burrito bowls, which he doesn’t like but usually if I keep the ingredients separated and leave out the beans my son will eat them. Not last night, he yelled, he cried, full meltdown, he tried to run away. Rightfully I could not out him to bed without food, but I was also exhausted and was not mentally or physically in a place to prepare a different meal from him.
I pulled out a slab of raw tofu, like the above, it cut about a third off, grabbed a slice of white bread? And a few cherry tomato’s and dropped them on the table beside his plate. He stopped crying, started eating, and devoured every last bite 😅😭

If you do it right tofu can be really good. After I squeeze the excess liquid out and cube it I mix it in a little soy/sriracha mixture and some corn starch. Air fry that with a veggie, and then coat in a sambal/gochujang with soy, rice vinegar, honey sauce… That’s miles better than eating a plain block with soy sauce

I'm a big texture person when it comes to food, and a lot of places do a bad job of making tofu with good texture. When you can get it so it's slightly crispy on the outside, and chewy on the inside, it's great, no matter what flavors are added. My ex refused to touch it until one day, I caught him picking little pieces out of the skillet when I left the room.

I think most Americans avoid because it doesn't have any flavor on its own. So you have this flavorless brick. Healthy, yes - but still, what do you do with it?
Any other food can be eaten raw and/or cooked with no seasoning and it still tastes of something.
That said, I've used it in the past. Diced up single serving portions and tossed in the freezer to be added to packaged ramen. Chopped some up and used it instead of ground beef in hamburger helper, which actually came out really well, because the tofu just slurped up that flavorful sauce.
And then there's the fact that the average American is not adventurous in their cooking or eating and tofu is a relative newcomer to the American diet landscape.

When I had a friend who was vegan (still my friend, no longer vegan) I would take firm tofu, squeeze even more moisture out of it, smoke it, cover in bbq sauce, finish in broiler. Made kind of a tofu cowboy candy and if done right caramelized nicely.

In Japan you can go to the grocery store and there is often a counter where tofu made fresh right in front of you. I didn’t start eating it cooked in different ways until I was an adult. Mind blown when I had battered deep fried tofu for the first time. My mom loved it with scallions, soy, crushed seaweed and umeboshi plums.

I'll grab a block of tofu, tear it into pieces, coar it in seasoning and cornstarch/flour, and pan fry it in a small amount of oil. It's really good, I'll add chicken bouillon powder to the seasoning and it's really good it kind of tastes like chicken nuggets lol. Chicken boullion, Paprika, garlic, a tiny bit of sugar for balance. Is good stuff

In college, I used to like to stick it to my dining hall by eating tofu consistently… For some reason, I thought that was expensive and that was gonna show them that they need better quality food. Raw (so to speak) tofu is a legitimate dish in Chinese cuisine and can be refreshing in summer.
On a side topic, tofu in a sense is already cooked. You add a congealing agent (usually a mixture of calcium and magnesium salts, but there are people that use vinegar) to boiling soy milk and collect the solid precipitates. Then you press it with various degrees to get silky, firm, extra firm, or sheet tofu.
