Kimchi and pickled herring taco

I had a little of both lying around (the fish is specifically Bismarckhering which is vinegar-pickled and slightly sweet) and thought it would make an interesting combination to try, tortilla missing a chunk for extra shitty points. Was honestly tasty, the kimchi spices lessen the fishiness and the fish sugar/sweetener reduces the harshness.

Only thing even remotely shitty here is the tortilla. Pickled herring and kimchi are both fantastic, and the only reason this isn't a regular banchan is because... actually, maybe it is a regular banchan. They eat pickled herring in Japan, though it's a somewhat different kind of pickling, so it wouldn't surprise me at all to find pickled herring and kimchi as a Korean side dish people actually eat from time to time. But they'd probably wrap it in lettuce rather than a tortilla for some delicious ssam.

Sounds pretty good. I love most fish but herring is at the bottom lol. The texture reminds me of a huge anchovy or something. I love sardines but they don’t have as much culinary potential imo.
