I’m disabled so I find it difficult to cook, heard this was a quick and easy hack and you can freeze etc. I decided to try two just to test and it was NOT quick and easy. It was long and arduous!!

Are these supposed to be egg bites? If so I'd say scramble the eggs a little more, fill the cups about half as full and maybe use some liners so they don't stick.

It also helps tremendously to set the muffin pans in a bigger pan with some water in that bigger pan. It really changes the texture of the egg to be tastier.

Oooo I make a ton of egg bites, and I never would have thought to do this. I was just thinking I need to use up a couple dozens today and I’m gonna try this! Thanks for the tip that wasn’t for me!

Side question do ducks lay as many eggs as chickens?

Depends on the breed of duck, when I picked breeds I chose high producer breeds, and I have 15 layers. My ducks are all different ages and at one point we had 6 adults and 10 babies… 6 per day was too many for us too, but there was no going back. So here we are, 13-15 per day, mountains of eggs everywhere lol. I have a poster at our local country store selling eggs, and I donate some, but it barely helps.

First, they look gorgeous to me. Second, in the first picture they look so pristine in the pan. Was the pan sprayed enough so that they could’ve just popped out in their current state?

First time I made something like this it was a disaster. I forgot to spray the muffin pan. But they tasted ok. Next time they were great. So we all make mistakes. They look ok and were edible. You did great 👍

I just made a 24 count batch of these 2 days ago. I would suggest using an immersion blender or regular blender to "whisk" the eggs and add about a half a cup of heavy cream per dozen eggs. The eggs will have the consistency of liquid eggs and it should hold better, also reduces the strain of whisking them yourself.

I think maybe too much egg went into each cup and maybe the ham needs to be chopped into smaller pieces. Also, if you have non-stick spray or liners, that would help you get them out with less mess, but some people use the ham as the liner. Put a slice into each cup first and pour the egg on top.

Thank you, I’ll try all this. I did two before this where I lined with the ham and then cracked the egg which were even worse.
I used some spray oil but that didn’t help me at all, the pan is currently still soaking lol

I haven't done these before personally but I always butter the indents when cooking anything like muffins and that makes them come out smoothly. It also will probably taste a bit nicer than spray oil, I find that can taste a bit strange sometimes if you use a lot.
If you're looking for something you can freeze and add to other meals, then I would recommend Yorkshire puddings. You can make a batch of them and freeze them, and they only take a couple minutes to heat up in the oven and go great with anything you serve with gravy. One thing I like to do is get a rotisserie chicken, pull some meat off, and heat up some roast potatoes or fries, a couple of yorkshire puddings, a side of frozen veg medley or some garlic butter broccoli and make up some chicken gravy usually with gravy granules. It's a simple meal but really tasty, and if you want you can add more to it to make it more substantial or scale it up to serve to other people. Some boxed or frozen homemade mac and cheese for example goes well (For some reason Kraft mac goes well with chicken gravy), you can make stuffing up, or more veg. But the basic one is easy to do, delicious and only needs you to put on the air fryer. If you want I can give you my secret recipe (which is my grandma's secret recipe, though it's pretty much the same as everyone else's)

Egg and cheese are the worst to get off stuff lol. Try cold water if you haven’t already — I find it easier to peel egg and /or cheese off when it’s cold

yes, line the cup with a thin slice of ham. (do not use liners - the egg will cook onto them.) spray the pan, then lay a slice of ham (or half a slice) in the bottom. I put the cheese on the ham. then pour in your egg.

I make muffin tin egg bites all the time. Crack one egg into each muffin spot, add in whatever you want (I usually do ham or mushrooms or peppers and then random seasonings). Stir it around and break the yolk. Bake for 15-17 mins on 350°F. Also, add a little oil or butter or non stick spray to the tin before cracking the eggs to make them easy to remove.
