Weather mins before checkride

Currently I'm 2 flights away from my checkride at my part 141 commercial course. I'm in a pretty bad situation after getting screwed over by weather for months.
I'm in a new aircraft and basically have been re-learning the plane every flight with these massive delays. So the question I have is what weather minimums should I have to get these last flights in?
I struggle with power off 180s the most and our dpe is very strict about them. I'm flying tomorrow and am looking at a 15 knot direct crosswind. It would normally be no big deal but with 2 flights left and a very expensive plane, where I don't want any overages, I'm not sure.
I know there are gonna be some part 61 pilots here going hurr durr ur never going to be able to fly if you can't handle that, and I agree but I really need these to go well! This course is only 10 flight hours and this is going to be the third lesson with power off 180s in the last like 5 months.

My advice to all my students is it’s your check ride and your record… if you have to ask these questions probably shouldn’t be attempting a check ride.

Also airline don’t really like to hear I go screwed by weather and sent it and fucked op the Power off 180.

Are you me? I’m in a similar situation. My checkride has been delayed twice due to high gusts and crosswinds. I can land in it, but not consistently to commercial checkride standards. I also don’t want to waste money on a shitty practice flight if I know I won’t be taking the test in that weather, but also don’t want to delay the checkride again.
