If I'm cooking burgers and I have the means, it's gonna be a smash burger 100% of the time. Sometimes that's not possible if you're cooking on an open grill or don't have a good utensil to flatten it with, but if you do that's very much the "right" way for me at least.
I've had way too many domed-up burgers that were nearly an inch thick and usually under seasoned. It just doesn't work as a burger, I don't need it to be pink , wet, getting the bun all soggy.. I'll save all that for when I have steak.

The onion burger. Developed during the depression to make your meat supply last longer. You use half meat, half onions, smash them together.

It's not at all like White Castle.
White Castle uses the steam coming off onions to cook the beef and steam the bun, which is why WC sliders don't really have caramelization and char to them.

This is an example of the fried onion burger being made by a food historian named George Motz.
It is absolutely seared, as are basically all smash burgers, and the onions also sear and caramelize.
About the only thing they have in common is that the bun is steamed on top and gets a good smattering of the beef and onion grease. This is also part of why WC sliders feel more greasy than the average burger.

Yes, but it's rarely my favorite unless it's the Oklahoma onion burger or a goober burger(smashburger with peanut butter and pickles from Missouri).

I heard about them like 2 years ago and they are just another good recipe for cheeseburgers that doesn't get too fancy (e.g. kojak burger has an egg on it, McDonald's claiming Big Arch as a new innovation>> Big Mac)
IMHO cheeseburgers are like jeans or cargo shorts... You can try to make them "stylish" but fundamentally they are great even without all the hype and the bells and whistles. Even a basic version is probably fine.

They make a lot of smoke so need good ventilation.
I made some at home in the kitchen once and didn’t realize smoke wasn’t all going up the vent smoke alarm went off and I turned around and house was filled with smoke.

No. If you want a juicy burger, don’t smash it. It’s all crust at that point which is an easy way to get around lesser quality meat.
I suppose if you like well done, mostly crusty meat this would be an excellent choice.

Natural juices in meat are just water (75% water and some myoglobin proteins that have no flavor). The flavor and "juicy texture" comes from fat, so using a nice 80/20 or 75/25 high fat content meat is always ideal.

Smash burgers are cooked by smashing the meat damn near the paper thin on a flat top grill. A regular cheese burger is going to be 1/4" thick, or more.
It's not advertising. It's a different cooking technique. George Motz has plenty of videos on smashed burgers.

Sure. I don't eat burgers as much as I used to for nutritional reasons, but I've always loved a variety of burgers. There's the giant super thick ones that are fantastic, there's the smashed ones that are fantastic. As long as it's good quality beef, and there's some good maillard reaction I'll be happy. Add in some great quality cheese and some fresh sliced onion, tomato, lettuce and mayo and then I'm super happy.
