Don’t get anything less than 20-30ah battery. Higher Ah means longer lasting battery life a 60v 18ah is a lot worse than a 32ah 48v

Give yourself the chance to test a bike with a hub motor as well as one with a mid drive motor. They have very different ride characteristics. If you want your e-bike to feel like a regular bike but with extra support to add to your human energy, you’ll want a mid drive. If you just want it to get up and go when you pedal, hub would be fine. If challenging hills are in your sites, that case also favors mid drive.

Okay it sounds like a classic bike style one would be best for you.. something like the Aventon soltera or Velotric Tempo or Trek FX instead of moped or cargo styles. Next thing to consider is do you want gears or single speed drive train, and do you want a hub motor or mid motor, and do you want a removable or integrated battery.

Get one that's UL listed. That way you know the battery won't burn your house down.
There's separate certifications for the battery and the electrical system.
Get both.
Velotric is one brand that has both and IPX6 and 7 ratings for water resistance which the highest available.
Safety and water resistance. For the money, you deserve to be able to ride in the rain.

Rent a few. Rent different styles as best you can try them out. Try a mid drive vs a hub in the places you would ride. Understand why you are buying and that will guide a lot of decisions. Cheap doesn’t mean bad but also cheap does tend towards that way a bit. Not always though. Reputable brands are a good choice and there are many in several price ranges. Direct to consumer isn’t bad but being able to try it and get support is harder, but possible. Know your bike weight and consider it for your use case - are you carrying up stairs or loading onto a rack? Fat tires are not required for most use cases but are pretty plush and heavy.
Some surprises you may not know - Lectric and aventon are both cheap brands that are well regarded. There are others you can find on here. Most on Amazon are not well regarded. - priority has deals through Costco that are quite good

By far the most important thing is repairability. Replacement parts should be readily available, and you should have confidence replacement parts won't disappear five years from now.
For that reason I'd avoid Direct-To-Consumer bikes. Either get an ebike from a traditional bike company or build your own ebike.

The ability to either get it repaired or repair it yourself. For some ebikes parts availability may be difficult and finding someplace to repair it can be a problem. If you're in the US definitely make sure it's UL certified.

Pay attention if you are at a bike shop or mistakenly sitting at your computer buying from an overseas seller.
Can’t test ride a pixle.
Ride several varieties, fat, comfort, MTB, cargo, etc etc
Don’t focus too much on the motor and get a feel for how the bike handles for your intended needs (commute, trails, recreation, family group rides.)
Support local shops. Well, at relatively the ones that support your needs. Not all shops cater to e-bikes.

find out what kind of bike you want(road,mtb,gravel,dutch,suv...) and get that. remember they are still bikes first, electric second.
