Fan controller question

So I bought new fans for in my pc since the old ones weren’t the best. But the new ones are the Lian Li Uni SL-INF 120. These come with a controller which I already knew. But while I was installing them I realised you probably can’t control them separately if they’re in the same controller.
Now I have 2 3-packs (one for the front and one for the AIO) so I have technically 2 controllers. Is it a smart idea to use both? Or would one controller be just fine.
My thought process one using two was because one 3-pack is for the AIO so that may need a separate speed than the front ones but on the other hand, I’m new to pc building so maybe it’s not even a problem at all.
Nevertheless, I have one cable with 4 SATA and one cable with 3 SATA. One controller needs 2 SATA so I’d have to add the other cable into the PSU for both controllers (because 2x SATA needed = 4 SATA for both controllers) Because the other cable with 3 SATA already have 2 plugged in for the AIO itself (not the fans) and for the RGB thingy in the case.
And I’m a little scared it’s going to be too much for the motherboard since it may not have been the best decision but that’s alright I hope.
So what would be your advice on what to do??

I would use both if like you said you can't control individual fans to have the AIO fans separate. No issue for the motherboard using the SATA connections it's all on the PSU. Fortunately you have a quality unit and I would have no concerns occupying all the connections. In the worst case scenario the PSU would protect itself from too much load and just shut off. But I wouldn't worry not like you are occupying all the connections on the controllers.
