I decided to have some salisbury steaks and sides of mac and cheese and a veg blend for dinner! Peak gen X eating!

Hungry man TV dinners, but homemade - roast a whole turkey breast, mashed potatoes, veb blend or green peas, canned cranberry gel, stove top, and wonder bread & margarine (I use real butter in all my cooking and only use margarine to spread on bread).
I make homemade salsbury steaks the same way.
I do have 1 hungry man dinner and a family sized frozen pan of Stauffers salsbury steak in the freezer for when I don't feel like cooking though.
Stew using ground beef and canned vegetables.

My whole life a quick meal has been a can of tuna, diced onion, a handful of shredded cheese, 2 spoons of miracle whip, 3-4 dashes of Louisiana Hot sauce, and tons of black pepper - mixed and eaten with club crackers or, when I'm feeling healthy, lettuce wraps/on a plate of greens.

My favorite meatloaf recipe, made in a crockpot:
2 lbs ground beef 2 egg 2/3 cup quick oats 1 package onion soup mix 1/2 cup ketchup
Mix all of the ingredients well and shape into a loaf in the bottom of your crockpot. 6-8 hours on low. Super simple. Extremely delicious.

I'll give it out. I modified my grandmother's. My husband loves it.
1 lb 80/20 hamburger 1/3 cup seasoned bread crumb 1/3 cup grated parm cheese 1 or 2 eggs 2 tbsp worcestershire 1/2 cup ketchup
1/2 tbsp each onion powder, garlic powder, seasoning salt OR beef better than bullion (don't want a salt lick)
1 tsp black pepper
Mix it well. Form into a loaf
I use a cake pan (10x10 usually) lined with parchment paper. Gives the grease a place to go. Cholesterol and all.
Bake off @ 350° F for about and hour, until internal temp hits 165°F.
I usually glaze with just ketchup. Old school. Starting about 30 minutes before it's done, add another layer at 10 minute intervals. 2 or 3 thinnish coats so it's caramelized and gooey sticky.
Let it rest for a bit before you cut it or it will fall all the way apart.

Well here is the surprise for you, I'm not actually English. I'm an Aussie and growing up in the late 60's early 70's there was still a lot of association with the King/Queen's English (still speaking with an very English accent with emerging Australian inflections) and traditions back then.
So there are a lot of similarities around food and how bland it was for both sides of the pond back then but noting like today's Australia food palette.

The preschool/daycare where I went served hot lunch. I can remember my mother going in the school with me when she dropped me off and going to the kitchen, and ask them what this thing was that I was talking about, and how they made it. She still didn't make it very much at home, but I do remember her going in the school with me to get the "recipe" from the ladies in the kitchen.

(If you like them, try gefilte fish. My first Seder dinner in college was a revelation.(There is a version of heaven that is the endless gefilte fish, charoseth, horseradish, matzoh--and chopped chicken liver. Prove me wrong.)

Rarely, because I know its bad for me, I have an old school plain hamburger the way my parents fixed them growing up: the patty (although I like it rarer than they would've allowed), lots of ketchup and garlic salt. I use ciabatta instead of buns because I can then make ordinary sandwiches out of the rest in the package or just have them with some oil and a balsamic vinegar as a snack.

I sometimes like to recreate my mother's masterpiece of the 80's - the "hotdog wrapped in cheese and bacon" - with Kraft Mac & Cheese.
Take a hotdog and split it lengthwise and squirt a line of mustard on one inside-side, and sandwich a slice of cheddar cheese from a 16oz block (it's the 80's and we aren't paying for shredded) now take a piece of "Sizzlean" (I couldn't stand the fat from real bacon at the time - but you can use real bacon today) and wrap it around the sandwiched hotdog/mustard/cheese. Secure the ends with PLAIN toothpicks.
Cook them under the broiler on a foil lined pan until the ends curl up kind of black and the bacon is fully cooked - turning as needed to get all the sides done.

I'm in wisconsin. Its basically ground meat (pork,chicken) shaped into a chicken leg shape with a skewer through it. I like dipping them into mashed potatoes and gravy.

I don't know if it has a name... I always called it ghetto tuna casserole. It was a college staple of mine from 1988-92.
If you use store brands, you can feed at least two hungry adults dinner with nothing more than an electric kettle to boil the noodles and a bowl to mix it all up in, for under five bucks.
A little hot sauce works well, too.

I wish I could get away with this! My ex-husband ruined this. My son was weird about mixing foods when he was younger and my X (a former Marine, yes former because he got a bad conduct discharge) was incredibly abusive about this. Yelled and screamed at my kids about eating it or eat nothing etc. So, heās an ex. And my now adult son will not even try all the awesomeness that can be with Mac and hotdogs. Iām also a fan of Mac and peas with tuna. But, no way is that happening either. Not in a shared meal experience.

For me, peak Gen X dinner is what your mom made quickly when she got home from work. My favorite was hamburger patties fried in a cast iron skillet. Then my mom would pour a can of cream of mushroom soup over the hamburger and cook it for a while. Always had it with salad (iceberg lettuce only) and white bread with butter.

Can you even call it a kit now that they removed the packet of "cheese"? My mom was the classic, "If you want to choose what we eat, you can make it yourself" so I ended up making CB pizza about once a week during my high school years for the whole family (with a bag of shredded mozzarella naturally). At some point in my 20s I was invited to a homemade pizza party where they had thought it would be good ironic fun to make CB pizzas, and were flailing spectacularly with the dough (very easy to tear holes in it, and you had to go off the instructions to let it rise enough). Luckily I was there with my gen-x latchkey skills to save the day!
