A few notes to that 200+fps in most games: 1. FPS is both dependent on the cpu and gpu. You can have a graphics card that can spit out 200 fps, if your cpu cannot handle them, you won’t see them.
The 8700G is great because it has decent graphics for light gaming. In terms of cpu performance, it’s somewhere between the 5000 and 7000 series in terms of performance. It will most likely not enable 200 fps+ in most games. If I check benchmarks, only x3D CPU’s will consistently hit that across all/most games. Regardless if that is an esports title or big pretty open world game.
At 1080p, a 9060xt or 5060ti should probably give you a high fps for a not a ridiculous price. So look at those.

8700g will struggle with most games achieving 200fps, but there is one thing you could do-
Use the 8700g's strong igpu to offload Lossless Scaling frame generation. Buy any decent/common 12gig card like a 3060/6700xt and youll be laughing in FPS

This CPU is slightly better than a 5800XT, about 10% better, which means it's nowhere a big performer, but it's no slouch either. It have as it's biggest problem the fact it have a small L3 cache. It's still close to what the 12th gen i5 and i7 intel cpus had, so it should not be a big problem. What you should look then is how much can you spend on the gpu. At 1080P Max settings, no GPU bellow a 5080 will give you 200+ fps no matter what cpu you have in newer titles, so you will have to adjust those expectations. Instead, I can give you what reached above 120FPS in TechPowerUp 20+ game average, which would be anything above the 7800XT in the 7000 series, anything above the 3080 in the RTX 3000 series, anything above the 4070 in the RTX 4000 series, anything above a 5070 in the RTX 5000 series, and anything above a 9070GRE ( or, realistically a normal 9070 ) in the RX 9000 series.
With that said, unless you plan on buying used, you should aim, if you have the money for it, for a 9070 or a 5070 at the very least, as those are the modern cards that reach this target and are available new in a wide way ( technically if you're in the USA you can get a 7900GRE new for somewhat less than the price of those on newegg, but it's not really relevant if you want some technologies or live in another country ). Now, if you're not willing to spend 600+ USD on a gpu, you will have to be happy with what you can have, which means a 9060XT 16GB or a 5060TI 8gb, as those would be about 350-450 USD ( the 16gb 5060ti goes quite above it, so it's kinda iffy to rec as at that point it would be better to just go up another tier ). Those cards should be able to get you between 95 and 105 FPS in newer games at that resolution, and go fairly above that in older titles. And I can go on about this and lowering the expectations even more, but you get the drill.
Now I will tell you the same thing the others said. Be mindful of the Power Supply you have, as it will affect the gpu you can get without having to change it too. Also, you dont need to max out your usage of this monitor, chill out, bro. If you really want it though, maybe a 5060TI with frame gen will let you do it at acceptable prices, but I don't recommend that.

You'll be CPU limited. Doesn't matter if you get a 5090, you're not getting 200fps in most games with an 8700G. An 8700G is slower than a 5800x3D in vast majority of games.

You’re a bit off with expectations here The 8700G is fine but 200+ FPS depends mostly on the GPU and the game An RTX 4060 RX 7600 can do 200+ in esports but not in most AAA games For more consistent high FPS you’re looking at something like a 4060 Ti or RX 7700 XT and even then 200+ in modern titles isn’t guaranteed unless you lower settings If you want a real recommendation share your budget and the games you play otherwise this is just guessing
