Upgrading CPU (AM4)

Just upgraded my build to a 5060 ti (379$) and I'm wondering if my R5 3600 will be able to handle it at 1080p? Budget for a new cpu isn't very high, was looking at 5600s and such.

Just do the CPU upgrade late if you don't have the buget rn. The r5 3600 will work with the 5060 ti, but yes, in certain games or certain upscaling (especially DLSS upscaling at 1080p) the cpu is a bottleneck. Still, it'll be usable.

No need to wonder, try it out...
If the games run fine, then no need to upgrade.
To test, just lower the graphics settings all the way and see if that makes the game run better. If it doesn't it means the cpu was already maxed out and an upgrade would be beneficial.
5600 is great value for money, or x version if not too much pricier.
5600/5600x is pretty the much only gaming upgrade that makes sense on am4. (Or 5500x3d from aliexpress).
5600x is also widely avalable second hand

Ryzen 7 5800xt is a good AM4 cpu, but will stretch ur possible budget a bit more.

You’ll get a small boost with the 5600(x), but I’m not sure if a 15% increase in power is worth the cost. If it is to you and you have it to blow, then by all means. 5600x is probably your best bet for some gains outside of an x3d chip, which for AM4 are incredibly expensive (more than double the 5600x). Moreover, it really depends on your games and if you’re trying to max them all out in the settings.
