Can somehow help me choose a bike?

I am VERY green when it comes to E-Bikes, but I would like to purchase one and al hoping folks here can help me out.
Here's my situation- there is a very large network of gated logging roads near me that is open to motorcycles in the summer. I would like to find an Ebike that I can use on these roads.
Due to the motorcycle restriction, I have no limit on how powerful the bike can be. Honestly, I would be looking at an E-motorcycle, but I do want the ability to pedal out if it dies. The more range the better.
The roads are generally dirt two tracks at less than 10% grade, although they can get rutted and bumpy. A good suspension is important.
Another catch- I am 5-5', and have short legs to boot. Because of this, I am leaning towards a \~20" step-through.
I don't have an endless budget, but I also don't mind paying for quality where it matters. I'd love to get something from a business with good customer service.
Does this bike exist? Or should I be looking at motorcycles?

A gasoline powered dirt bike is what you want. You do not want any e-anything.
You need something with a real suspension. If you MUST buy an e-bike, a step through is the wrong choice, IMHO for the terrain you will face and describe.
You will be LUCKY to get an hour out of any e-moto on these trails.
Don't assume that because an e-bike has pedals that it is therefore pedalable. Just because it has pedals doesn't mean you can pedal it, especially on off road conditions. An e-bike capable of riding these trails will be very heavy and very difficult to pedal on flat poor packed roads, let alone up 10% grades.

Whenever I venture into deserted places, I take a spare battery.
Whichever bike you choose, an emergency tank is helpful,
especially for range anxiety when you get lost and what-not.

If a road feels pretty bumpy when riding on it with a car, it will likely feel insanely bumpy riding on it with virtually any e-bike even with suspension.
You may just need a dirt bike or electric dirt bike.

Check out the lectric xpeak 2. Just got mine and I’m loving it. Nice wide trail tires and you can hack the settings to get up to 25-28 mph. Pretty good shocks.
