Just closed on my first house and this is what my kitchen skills have been reduced to. Eggo waffles crumbled up with scrambled eggs because apparently I spent all my money on a mortgage and forgot I still need to eat. The waffle pieces actually add a weird sweetness that doesn't completely suck. My mom would be so proud of how far I've come. At least it's protein and carbs right

Dude, go out of the gate swinging and put as much extra on it as you can and knock years off! Check out the mortgage pay off calculators and see what it would do just by paying an extra $200 a month, every month. Get a second job at a fast food place, i used to get half off of my bill but they liked me, so I got to eat the mess ups and the scraps for free! ;) life hack! Also listen to Dave Ramsey if you don't already! He has some good points on getting debt free!

Point is, when I went to apply for a loan in MY living area, loan officer tells me the houses I qualify for (190-220k) DIDN'T EXIST. I said, don't worry, I'm not looking for a lot of house. He said no no, you misunderstood me. THEY DON'T EXIST.

Buy yourself a bag of flour and teach yourself how to bake. Super cheap and fun. Also, buy whole chickens when they are on sale. Learn how to butcher and make stock. I'm single and one whole chicken can get me 5 meals. You got this buddy.

when my grandparents bought their first house together they had to use milk crates for chairs and a cardboard box for a table.
They had to heat their home using coal that 'fell off the back of a truck'.
Its typical to have to tighten your belt significantly after buying a house.

I would have soft boiled or poached the eggs ( love a runny yolk) instead of scrambled but this is a great meal. I try to avoid sweet things (syrup) except for the occasional deserts but the rest is on my regular repertoire. Simple is better in most cases.

Get you a waffle iron and make some real waffles with complete mix. They taste better, are cheaper and more filling. Get some beans and oats too. I think beans, oats and potatoes are the most healthy/filling and inexpensive foods you can buy along with eggs.
All in all, your waffles look pretty yummy though. I could eat that any time of day.
