Exactly why? OP made a culinary choice. GF doesn’t like it. She doesn’t have to like it. And if it’s central to the OP’s post, then it’s not the food that is the problem; it’s the GF.
I like my steaks rare to medium rare. But I don’t post pictures of them and say my GF/Wife doesn’t like it, because any woman that doesn’t like their steaks rare to medium rare is an EX.
It wasn’t like OP added kimchi or durian to this.

I literally eat a quarter of a head of cabbage as a meal every other week. Roasted until crispy on the outside and soft in the center. Topped with romesco sauce and a drizzle of nice evoo. Side of cous cous and it’s heaven.

I'm chinese and I approve of this lol you can refine the method a bit more by heating some oil in the pot first and throwing the tomatoes in there (I prefer also throwing shallots and garlic in too) for a bit before adding water for the soup. Depending on how done you like your noodles/cabbage, throw em in in whichever order. I also would do napa cabbage instead.

Personally, i'd be ok with fried noodle with tomato but not noodle with soup like ramen with tomato. Because overall i don't like soup with tomatoes unless the tomatoes is crushed into the soup like tomato soup.
Yeah it's weird i know but that's just how it is.
Cabbage is, well i sometimes put cabage on my bolognese sauce, it adds more crunchy texture without changing the taste at all XD
As long as cabbage is put at the end of cooking of the soup, i like it so it still has crunch on it.

Not a fan of cooked tomatoes (unless it's sauce) but hey you do you. I love my ramen with sauerkraut on the side tho, the crunch goes hard. Often throw corn and peas in the ramen itself bc it doesn't lose the texture.

Why not green beans? They fit with the Asian theme going on here. Ever had those stir fried green beans that are wrinkly on the outside and still a bit crisp that are often made with ground pork and garlic in the pan? One of my favorite Chinese dishes.

Pretty common here in my area in south east asia. There is a dish called “maggi goreng” which is basically just ramen cooked normally and added with tomatoes, cabbage, carrots, onions and chicken/beef.
And in the end, ramen are just noodles. Noodles of many varieties in east Asia and south east Asia are just stir fried with veggies and meat.

In Japan, trends come and go quickly, but they come really hard when they do. I remember travelling to Osaka around 2014 right in the heart of a tomato craze. There were tomatoes on top of okonomiyaki (added on top of that end before the sauce and mayo; amazingly good), takoyaki, added to ramen (both tomato soups as the base and tomatoes just floating in whichever broth you chose), some tomato sushi, grape tomato kushiyaki (maybe my favourite)....
Anyways, all I'm saying is that you might be out of date, but you aren't totally off base.
