Today's ration: rice and beans, AGAIN!

1 can dark red kidney beans
1 cup white rice
2 cups water
1 spoon tumeric, 1 spoon curry powder, half spoon thyme
Getting kinda sick of eating rice and beans, and almost as sick of eating beans and rice. Only having beans 2 days this week though, and none next week or the week after, but gonna have lots of beans again after that.

I have a 2 qt crock pot, and I make chili, or beans from dried beans with bullion base ( one part beans, three parts water). If you make 2 parts beans to one part rice you will have a complete protein.

Cumin and cilantro and chiles would improve this massively, fresh onion also. I eat this almost daily but I like Pinto beans.

Not quite, OP lives in a hut in the middle of nowhere and grows some food, the rest being from Mennonite stores or food banks. Onions are pretty cheap tbh.

OP can’t make it in to the store often and it’s the end of winter. Their situation from what I’ve seen prevents any more frequent trips to the store than once or twice a month. So once any onions are gone they’re gone for an extended period. Meaning that making dinner for the evening requires whatever they already have on hand

I mean obviously you'll find few rich people living in a hut in the country without running water or electricity. But onions are one of the best foods if you're broke, and the people on the subreddit you linked agree. That and potatoes.

Once you get to chiles, onion and tomatoes, you've got salsa, and since I almost always have a jar of salsa open, that's what I throw in.

I have 3 one quart jars of salsa left, but if i open one i gotta use it all within a few days and it often molds after a week, so I'm not opening a jar for this. Salsa cost money, and its very hard to get anyplace that sells it, ir anyplace in general.
I do plan to open a jar next month but got that planned/rationed to use up within 6 days of opening, hopefully the weather won't be too warm for it open on the counter in May.
