For context, for traditional dish mentioned (kholodets is a russian version btw), the meat part is usually very soft and wispy, no hoofs involved, so yes it's you can cut a slice like a cake and eat it with a fork. You can eat it with the spicy mustard (helps to cut the rather neutral taste of the dish itself) or horseradish based spicy sauce (both are very popular in Russia). For the sides, it depends if you're eating like a snack, a meal or sides to a drink. In my household we usually just eat bread with it (the rye version, tho whatever floats your boat), you can probably eat it with some potatoes too. Cucumbers might go well too.

Traditionally with very strong horseradish and vodka. It doesn't taste bad, but the texture is nauseating, hence the vodka to knock it back.

Then why even have them inside? If for flavor take them them out after cooking so you CAN cut it. Hooves are basically fingernails so I doubt you're eating them. I know nothing about this dish or where it originates from but I feel like this is a rookie mistake.

It's a legit dish, quite popular in my country. The presentation here is bad but the gelatin jelly is supposed to look kind of like that. Personally I find it disgusting but a lot of people love it.

Aspic chicken was a known thing in the UK in the 70s. Commonly part of a meal on an aeroplane flight to Spain. Edible, but I've yet to find someone who would eat it by choice ;)

I'm conflicted. Here in Italy, at some point in history but maybe it's still available and I'm not aware, we had something extremely similar in stores - it was a variation of a canned food called Simmenthal, basically beef in aspic, but the variation I'm talking about was chicken and for a very brief period during my adolescence I used to LOVE it, even though aspic disgusts me in general.
Now I'm back to finding the texture vomit inducing.
