Red light illuminates more fully, while also being easier on the eyes. A lot of older analogue GA planes use red lights for the dash at night.

I personally swear by red being the best color for keyboard backlighting for gaming at night. I also vaguely remember the non-fiction book Submarine by Tom Clancy mentioning that red lighting is used in sleeping quarters on subs.

Militaries use red lighting for many things. I still have my dad’s old 991s with the filters in the base. Red=night. Better on the eyes and better for concealment.

On some of the Max8 planes, there's a "Safety Demo" setting for the lights that does this, presumably to highlight the location of the emergency exits. However, we're supposed to use the "White Bright" setting during the safety demo, so I'm not sure why this setting is even there.

Emergency mode. Green is pointing to the emergency exits and red is trying to retain your eyes night vision as you make your way to the inflatable rafts in the blackness of night in a moonless sky 300 miles from shore; before the aircraft sinks.
TLDR: Sorry to break it to you, but the captain turned on the emergency lights before letting you know you are about to crash
