Because it subsidises overeating and avoiding the consequences all while people go hungry. I feel like you’re being willfully ignorant. It’s the same principle as feminism postulating that all of men’s and women’s issues stem from the patriarchy rather than and misandry and misogyny separately.
A tax on fat-inducing and fat-reducing products aren’t attacking fat people and skinny people as both products exist because of fat people giving demand thereby incentivising supply. People who eat healthy don’t use GLP-1s and men who understand misandry don’t use misogyny.

A lot of is are disabled with chronic illnesses already and are on GLP-1's. Medication should not be extra taxed.

"Junk food" is a catagory that causes a lot of problems, including some of the ones you're talking about. When good assistance excludes junk food, it frequently means excluding the most affordable food, food with a lot of calories or sugar someone might need for a boost (doing labor while underfed benefits from high calories, diabetics can benefit from a high sugar drink), and ready to eat food (which can be very valuable for those without kitchens).
I'd be completely on board with feeding the hungry through taxes, but I think if the taxes are going to target a particular group this would be a bad way to do it. The truth is that in my country (USA), paying for the food isn't the issue, the issue is that the people in power want people hungry.

Seriously, find me a hungry person and ill show you a dozen ways they can get fed, and millions of grants standing ready to fund any food charity that would fill a gap if it exists.
Its not a money issue.
Its largely a polling issue, vague questions about variety and desirability that can label a person as food insecure despite plentiful food, or a willful refusal to accept charity.

Sugar tax, junk food tax, and hell grocery tax in general, already disproportionately impacts the poor. (lack of) Access to high quality food also already disproportionately impacts the poor. We need steeper progressive taxing not more taxes for the poor.

Nah, tax junk food, use that revenue to subsidize GLP1's, then when everyone is eating less, give the food surplus to people who need it
