Brake Pad Materials (Ceramic vs. semi‑metallic) — which actually performs better for daily driving in mixed climates?

Depends on what you mean by performance. Semi-metallics typically bite harder and are more fade resistant at high temperatures, which is why you usually see them on high performance cars and heavy duty pickups. Ceramics provide lower noise and dust at the expense of the above and are better for normie commuter cars.

I remember the first time I heard a set of semi metallic pads being bedded in.

Try bedding in Hawk carbon metallics at night. Sparks shoot out of the wheels and illuminate the sides of the road.
