Skin, the bit of meat sometimes there, the gristle and gelatin. For me it’s a texture thing. I love this textures. I’ve also eaten pickled cow’s feet and chicken feet. I have them in souse which is so good

Pickled and a part of it had char marks, so I imagine they were grilled too. I had transferred it from the container it was delivered in, so no brine/broth

Ive never seen these before but they look good :0 Do they have a sour pickly taste or is it more salty? Is it soft or does it have a chew like intestine does? It looks like it has gelatin the same way beef neck or oxtails do in soup :0

There’s a slight tartness from the vinegar but it’s not very strong, and it’s perfectly balanced so not salty. The skin was chewy, the parts that had actually fleshy meat tasted like country ham (and I love country ham), and the gelatinous parts were soft and silky. It was actually so good. And that one foot was $5. Insane deal considering how big it was

I didn’t see any on the menu, but they do have chitlins, bbq ribs, shorts ribs, chicken done a few ways, meat loaf, jerk turkey wings, smothered turkey wings, smother pork chops from what I saw yesterday. Definitely gonna go back for the pork chops
