OP probably let it cool off for too long. I'm a freak, so I like them like this, but in my experience, if you let the noodles sit in the bowl for like 5+ minutes, they continue cooking and keep absorbing the broth. That looks like what happened here.

I've accidentally done this a few times in the past. It's a totally normal combo but the noodles tend to get very soggy and slimy easily. Best thing I can suggest is to stop cooking the noodles a lot earlier, like when they're still hard and put the poached egg when broth has cooled a bit. I usually put the heat on low/simmer once the water is boiling and wait a bit before putting the noodles, then they won't overcook as easily.

I do this with shrimp Maruchan. I just plop a raw egg in the hot broth and noodles and mix until the egg is cooked.
