I have three options almost of the same price
Lenovo Legion R27qe (IPS, flat) gen 2
AOC Q27G4D (IPS, flat)
LG 27GS60QC-B (VA, curved)
which is best in terms of colour? which do you generally recommend?
P.s my room is generally dusty and I used to have a legion gaming laptop

Generally speaking IPS panels have had better color than VA, but modern VA has gotten to the point where you can't really say that it'll be worse than IPS.
What I can say about VA vs IPS is VA has much higher contrast, if you're sitting in the sweet spot for the viewing angles, which is why most VA monitors are curved. As soon as you move a little outside of that narrow sweet spot, they'll be no better or often much worse than IPS. They also generally have much worse response times than IPS at this price range. Reviews of VA panels where they test this will often show similar response times as IPS, but this is due to VA panels kind of cheating how response times are calculated. Basically you're looking to see how long it takes for a pixel value to go from one color value to within 90% of the target color value. The problem is most VA panels heavily over drive the pixels so they shoot far past the target and it can take 40+ms to actually settle on the target value. This means much more significant inverse ghosting, where bright or dark objects will leave streaks of dark or bright "ghosts" behind them, especially on dark to light transitions where VA panels are even slower.
I hate this artifact, but some people don't even notice it, and the increased contrast of VA far outweighs any response time and reduced ghosting benefits IPS might have. Similarly, IPS panels often suffer from IPS Glow, where the edges and / or corners of the screen may appear much brighter than the center when showing a full black screen. This doesn't bother me that much, but other people hate this as much as I hate inverse ghosting.
My personal recommendation would be he Lenovo though. It seems to be a higher quality display than the AOC here, but there aren't a lot of professional reviews of any of them so it's going a bit on vibes (not AI, just personal vibes reading what little I can find on them). Usually brighter backlights, which the Lenovo has, is a good sign that the panel itself has better tuning both in color accuracy and response times, while the AOC is fairly dim.
The LG is also extremely dim putting it more in line with the specs I would expect to see from $150 monitors, or at least sub $200 monitors. So I would only recommend it if you know you're someone who greatly prefers curved or VA panels.
