when I turn my PC on it'll post and I get to my desktop but will then shut off after a couple minutes, I repeat this like 3 times, then it works fine for the rest of the day.

This has got to be one of my most confusing issues ever as there's no light on the motherboard that indicates an error there, and I'm thinking like maybe its the PSU but if it works fine for the rest of the day then maybe it's fine? only concern I have might be the inconsistent voltage maybe damaging components.
Specs are as listed and I built this about 4-5 years ago;
RM750 PSU
X570 Aorus elite wifi Motherboard
8x4 8gb 3200 RAM
ryz 7 5800x
3070TI
500gb nvme ssd for C drive
4TB ssd for storage and two 2TB HDDs

But odd it works after a few reboots. If you boot to bios does it experience the same shutdown
Realistically it is likely the PSU at fault. I would replace sooner rather than later. You don't want a failed PSU causing component damage.

Using core temp to see wattage and temp averages, the temp seems to be an average of 42C and an average watt of 38 at idle. Gpu average if it matters if 30c.

Sounds like a power issue.
Clean the PC. Check cables.
Worst comes to worse replace the PSU

I had this happen as well, I disassembled and reassembled the entire pc, renewing the CPU thermal paste and cleaning out all the dust in the process. It has not happened since.

I bought some arctic silver 5 at some point, I can't even remember when, but it hasn't ran out yet, so that's what I am using right now.

your pc is probably having a power delivery or stability issue during cold boot since it posts and shuts down a few times before running normally it’s usually not the psu failing under load but could be slightly unstable voltage at first, motherboard bios quirks with memory, or ram/cpu needing a moment to initialize
try updating your motherboard bios to the latest version check that all power cables including 24-pin and cpu 8-pin are firmly seated and reseat the gpu run a memory test to make sure nothing is borderline failing enable or disable fast boot in bios to see if that changes behavior if you can, monitor temps and voltages in bios immediately after cold boot to see if anything spikes or drops
if the system runs normally after a few tries it’s unlikely to damage components but checking bios, cables, and memory first is worth it if the issue keeps happening test with another psu to rule out inconsistent voltage
