You know how people recommend cooking a ribeye roast? There's a few ways but one of the easiest is to keep it at a low temp in the oven (or smoker), like 250F or so, until it probes to finish temp minus maybe 5F in the center. Then take it out, crank the oven as hot as it goes, and hit it for maybe ten minutes until the outside looks beautiful.
Now imagine skipping the first step. The inside would still be cold and raw when the outside is done... and still cold and raw when the outer layer is overcooked, too.
Definitely -5'f from what you actually want. Specially from thick hunks of meat you cook.
The outside of the food is going to be much much hotter than the inside, even when you take it out of the heat, and that heat has to go somewhere... so it goes to the center of the food, cooking it more. Easy way to turn a medium rare, into a congratulations on accident.

They're cooking at too high of a temperature thinking higher temp guarantees lower time. They might have even done math to tell them the equivalent temp to make a 15 minute cook take 10.
Too bad that's not how physics works. It's not a linear relationship.
