What stage does acropora humilis/hemprichii/retusa need to reach before being able to test for oxidative stressors? and how long would it take?

Are you looking at oxidative stress in response to a specific stressor? ROS and RNS can be released due to a lot of different processes. It’s part of immune response and natural cell processes, or can be a result of abiotic and biotic stressors.
Depending on what you’re looking at I would search the literature for studies looking at oxidative stress at different developmental stages and see what they use in the methods. For example, I don’t personally do anything with different ages but in my lab we use different assays to measure antioxidant enzyme activity.
