You should’ve started her with Starfleet Academy. That’s the one that was designed specifically to bring new viewers into the franchise. Plus, if you didn’t watch the old shows from the 90s it’s really hard to get hooked on them just because production values and the way TV is made has changed so much.

Show her DS9. My wife wasn't a fan of TNG because it was so episodic, without clear character arcs. Character growth happens, for sure, but the plot of each episode is the point.
She liked DS9 because there were episodes that specifically served to explore the lives of the characters and showed their growth.
If she just doesn't like Sci-Fi, then you know what to do.

In all seriousness, my partner hated Encounter at Farpoint. Six months later, we watched selected eps from seasons 3 - 7, then the movies, then Picard. He couldn't get enough of Picard. I think sometimes production choices of the 80s and 90s take some people out of the suspension of disbelief and into very critical mindsets. Can't really help that, but some stories are timeless and grab the attention. Maybe if she's willing to watch more, something from Season 3 on can be used to pique her interest, and you can catch up on important Season 1 and 2 stories later on.

This is the best answer, if I were to have my wife sit down and watch TNG I’d start on season 3 and just have her watch a season recap of 1 and 2 . There are some episodes in those season but man the writing and production quality aren’t as good as they could have been.
Feels like most of 80s and 90s trek series hot their strides in seasons 3.

Show her an episode that deals with issues she’s interested in. My wife never cared for Trek and one day I was watching “Ethics” and she was engaged. She’s a nurse in palliative care so it was right up her alley. It took awhile to get through S1 and 2 but we landed up watching all the seasons and we even went to a con together back in 2017.

Hope she gives more episodes a chance. It took awhile for TNG (and DS9) to grow on me, after initial interest and "it's not TOS" reaction. maybe less than 10 episodes?
She might be interested in strong women, the weird aliens, the culture clashes/resolutions (which is very relevant to modern Earth life!), the medical or engineering aspects. Or the costuming! There's something for everyone in Star Trek.
Find some aspect of interest and perhaps she will want to spend some quality time with you watching something you enjoy, and get a little something from it as well.
Make the popcorn or her favorite snack too???? MAKE IT SO!
