I think it varies from coutry to country. In the US and UK I think it means just pickled cucumber but I've also seen pickles refer to pickled mix of various vegetables.

Yea but in the US a pickle literally just means pickled cucumbers. If it's any other thing that has been pickled we say "pickled x". Why? Who knows. We're Americans and we confuse even ourselves.
