Saint-Félicien - a double cream soft cheese. Was available in Tesco but never seems to be there now. Once tasted, never forgotten!
Honourable mention : Gjetost, a toffee like Norwegian cheese with earthy, goaty, tangy undertones delivered in a sweet caramel coloured cheese. Hard to find (Waitrose stock it) and best eaten in wafer thin slivers or ribbons.

Whilst on a circus contract, I encountered a mystical specific form called the half moon cheese.
Within a 6 week contract, my partner and I exhausted all available supplies of such a beauty.
It was a beautifhl mix of a primarily double gloucester with a hint of red Leicester with slithers of stilton.
It was the most orgasmic entity i have ever discovered.
We simply cannot find this identical cheese.

I also love a good over-ripe brie.

Though these days I'm also enjoying German smoked cheeses and even some softer French ones. I do sometimes lust for some over-ripe Brie (when it starts to go slightly gooey), but only with bacon.

Hard agree on Stilton. I love all kinds of blue cheese but Stilton is genuinely my favourite of them all. It’s the perfect balance of strength and sweetness. I do like French versions but find they can be a little overpowering.

Yes, but I prefer the "technically not Stilton" version called Stichelton.
It doesn't meet the PDO requirements because they use unpasteurised milk. So they can't call it Stilton, even though the original 17th century version of the cheese wouldn't have been pasteurised as it wasn't invented at that point.

Well it used to be Colliers Powerful Welsh Cheddar but that appears to have fallen off the planet.
This then morphed into Extra Mature, then Powerful Cheddar which just didn’t do it for me and the last one I tried in their familiar black packaging complete with Welsh miner and colliery tower and even mentioned Wales on the packet somewhere and the last black packaging complete I bought was called Powerful Coloured Cheddar or something which turned out to be a shiny, processed block of smooth, almost oil-like textured American type cheese which tasted shit.

I have a new favourite I found just this week. Marzolino di Toscana. A semi soft mixed cow and sheep cheese coated with tomato paste. It’s unbelievably creamy with a subtle flavour. It’s lovely cold, and melts to a lovely puddle in toasties.

Love Brie, but it's got to be properly ripe and squidgy. I always choose the one which is closest to its end date. Unripe Brie is still white and chalky inside. Not very nice.

I enjoy either. They're both different experiences though. Ripe has a richer and stronger flavour and is great on its own or with crackers. Younger bries are great in a ham sandwich, the milder flavour not overpowering the meat.

Mature cheddar. .Specifically there was one I once had. I was at an arts and craft fair and there was a stall just selling a 5 year matured cheddar. I tried a bit of their sample and it was the cheese if the gods so I bought a whole block. I would have bought more but they wouldnt let me.

Flower Marie is awesome. It's a soft unpasteurized ewe's milk cheese from Sussex. It's an obscure pick, but I love it.
Other good ones are Stilton, Roquefort, Brie, Camembert, and Sage Derby.

My favourite cheese is old stinky soft thick crusted Brie. It's like a pie, but a pie where the inside is cheese, and the pastry is also cheese.
It's good for melting on various oven baked potato treats, it's great wrapped in antipasti meat with spicy ajvar, or even simply on a gluten free cracker.
Whoever invented Brie: I appreciate you more than you may know.
