My guess is sesame paste (tahini) mixed with soy sauce and maybe some vinegar/sugar. 芝麻凉面酱. He could have mixed it smoother and less thick, but its real and its great.

It's very likely century egg sauce made of mashed century egg yolks, not sesame paste, especially since the "whites" of the century eggs are present but the yolks are nowhere to be seen. Century egg tofu is a pretty common asian cold dish.

It doesn't have to be an official dish. You're not going to find something that looks like this at a restaurant or even an online recipe site. You mix what sauce you like/have. Some common condiments to add and mix are: soy sauce, black vinegar, sugar, sesame oil, raw garlic, chili oil, etc. I would guess this one either has sesame/peanut paste, and/or some kind of fermented tofu.

I grew up eating things with the same taste profile… if I could just say, he needs to make a choice:
Sesame sauce OR century egg. Not both.
If it’s sesame sauce - dilute with a few drops of water, pour over, garnish with green onion.
If it’s century egg - skip the sesame sauce. Just do soy sauce with a little sugar, then garnish with century egg slices, not chunks. Green onion goes well here too.
Other option - look into salted egg sauces. But whichever way he goes, you need to slice the tofu before plating and putting the sauce on.

Not really a fair comparison. Most tofu dishes people in the West are familiar with have the tofu either pan-fried, baked, or fried, or at least if silken being in a hot sauce or stew like mapo tofu or sundubu jjigae. The sadness of this image is also probably amplified by that cement-looking sauce.
