Recently bought some to try for the first time.
No difference in taste from chicken eggs at all.
But if you boil them they are hard to peel and if you fry them they cook too fast and first ones will overcook before you manage to break last ones.
Really fun to put some boiled ones in ramen.

I thought they'd be richer in flavor than chicken eggs. Duck eggs are much richer & thicker, I guess I thought quail eggs would be closer to that for some reason.

Buy older ones, or wait a while before using. After boil, cool them immediately in cold water and rinse multiple times until they are cold. Break the eggs IN/Under the cold water, and then roll them under your hand on a table or something. Push with your thumb and the shell comes right off. It is still tedious to do for this though, since there are so many to do.

They are not pickled and I used regular yellow mustard miracle whip (please don't judge me) salt pepper and paprika

Ahhh. Then I do have to judge 😔. Dukes and spicy mustard is a must. I've never had quail eggs that weren't pickled, so I'll have to try those.

Fresh quail eggs taste exactly like chicken eggs, but the canned ones have a slightly tougher texture for the whites and creamier yolks. Taste like boiled chicken eggs though

You can use tinned quail eggs to make awesome, tiny tiger skin eggs too. They're Chinese boiled eggs that have been fried and then put in a sauce. Quail eggs make a great, poppable snack version of it!
