This is such a stupidly simple answer but entirely accurate. Pancakes, waffles, French toast, sausage, bacon. Anything traditionally breakfast related is great with syrup. I don't pour it on eggs or hash browns, but I do run those through the leftover syrup on my plate

My mom used to make it for breakfast, until my sisters were old enough to try. They didn't like cornbread, so that was the death of that. My S.O. thinks it's weird.

I make it in a square glass baking pan and then cut it into 4s. The quarter I put on my plate I cut in half - horizontally - the crust sides go on the plate, butter on top, then syrup. It soaks up everything perfectly.

If you want to pour it on some hash browns, you should make some chicken and waffles.
Except instead of waffles, cook some tater tots in an air fryer for about half of their normal cooking time, and then toss them in the waffle iron to finish them off. Voila! Potato waffles. (They’re so good)

Cut an acorn squash in half, scoop out the seeds, put a pat of butter, some salt, and some maple syrup in the center, bake at 400F for 5 min, open the oven and spread the buttery maple deliciousness in the center around the entire exposed area of squash, then continue baking for 45-60 minutes, occasionally basting with the tasty pool of butter and maple syrup if it gets dry. Remove when you can easily pierce the squash with a fork or toothpick.
Also mandatory in roasted or pureed butternut squash.

Ok, hear me out. Dice up potato, sweet potato, carrots, and parsnips so that they are all about the same size. Roast them on a baking sheet. Drizzle with maple syrup or honey and serve. This is the best side dish for chicken, pork, or beef, especially on a chilly autumn evening.

Sometimes I make a spicy potato hash and drizzle a little of maple syrup on top with some Valentina or Tapatio hot sauce
1 or 2 fist sized golden potatoes Half a whole yellow onion 1 jalapeño 2-3 eggs Cumin Chipotle powder Salt What ever cooking oil you prefer Maple syrup Hot sauce
PREHEAT the pan on medium. Seriously, don’t skip this step. Use the Leidenfrost method.
Chop the potatoes into half cubes ( I like to do this part the night before. They store well in a sealed container full of water.) and let them dry.
Add your cooking oil
Dice the onion and jalapeños.
Assuming the pan is hot now, toss in the onion. Let those cook until they start turning brown.
Time for the spices. Only a bit though. Stir that in and cook for about 30 seconds.
Now, add the potatoes and spices. DON’T add the salt yet.
Stir everything occasionally.
When the potatoes are soft enough to push a fork through easily, add the eggs and salt just before turning the heat down.
Serve it up in a bowl and warm up some corn tortillas for extra deliciousness!

Funny. I'm typing this with exceptionally sticky fingers because I just finished bottling 2 gallons of pure maple syrup and am boiling another 3 gallons of bourbon maple syrup. I'm at 215 degrees, so I have five to go. We use it for so many things. Our favorite is glazing carrots with it, followed by mixing it in squash. We make barbecue sauce with it, marinades, apple pie, plum sauce, apple butter, and my sister said it was amazing in her spice cake.

As a glaze for things like chicken, salmon, vegetables. Or when making homemade salad dressing. Or in something like bbq sauce or chili. But in all of those cases it is almost always used very sparingly, it’s not like dumping it on pancakes, it’s just another ingredient to add a little bit of sweetness and a hint of maple flavor. It goes best when you add like smoke or charred flavors alongside it.

There is a maple, Dijon, rosemary sauce I found for chicken and pork years ago that’s a house favorite.
For a while Costco had a bourbon maple syrup and I used it in all kinds of things in place of sugar if I wanted a little sweet or just to balance acid. It worked really well in chili. I always added just a touch, you could taste the difference but not so much that it skewed sweet.

I lost track of the original- I think it was an old Pinterest and has since disappeared- but this is pretty darn close.
If I’m doing a pork loin I will cook it with the sauce but for chicken breasts (I prefer them to thighs) I do an over night brine with salt, rosemary, peppercorns and some sugar, bake the chicken ‘naked’ and make the sauce separately on the stove.
I like to make this sweet potato dish as a side.

Many people have mentioned hot breakfast breads and grains and charcuterie-adjacent meats (sausage, bacon, ham).
It's also wonderful in beans, not only baked beans but also any dish made with small red, white, or brown beans. For reasons, I have to be careful about saturated fat, so I've been able to replicate the taste of pork sausage in beans with a lot of sage and paprika plus a shot of maple syrup; for bacon, maple syrup and smoked paprika.
Adding maple syrup to the marinade for meat that you barbecue or stir-fry is also good.
And I improve the flavor of soups that I had to make with water instead of broth by adding a little maple syrup. A half tablespoon for four people will do it. It makes tomatoes, sweet peppers, and carrots taste like you roasted them before you put them in.

I tried for years to make maple balsamic salad dressing, but it always tasted way too sweet. I finally saw a recipe online which mentioned the proper ratio: 4 to 2 to 1 (4 parts olive oil to 2 parts balsamic vinegar to 1 part maple syrup.) Turned out perfectly- it’s the formula I use all the time now. It’s especially nice in a salad with walnuts and apple slices.

I use it in cooking. Last night, I made pan-seared salmon with Penzey's Northwoods seasoning (a mix of paprika, garlic, salt, pepper, rosemary, and a tiny bit of chipotle) and smoked maple syrup. My favorite way to eat salmon! I also put it into cocktails sometimes. It's great in a rye old fashioned. Of course I also put it on waffles, sometimes on grits if I'm eating them at breakfast (rare for me). You can mix it into marinades, salad dressings, sauces, etc. You can bake with it.

No, we approve. Try putting old cornbread in milk and microwave it for fifteen second intervals spooning the milk over it or pouring steamed milk over it and spooning it on top until the milk absorbs. This is a old southern breakfast that uses up stale cornbread and it has a taste and texture similar to cake. I’m sure its even better if you top it with maple syrup.

Any "breakfast" sweet bread or quick bread is fair game-- waffles, crepes, corn bread, biscuits (the ones like scones, not the ones we call cookies), all of it. Brown sugar and maple syrup on oatmeal or grits is classic breakfast yum. I'll even mix it into the glaze for cinnamon rolls now and then, bonus if there are pecans or walnuts to include. But my favorite is to add it + cinnamon to warm butter and pat it on top of fresh biscuits rather than "honey butter". It's a deeper, richer flavor when you have legitimate maple syrup, but both maple syrup and honey are cut with so much corn sugar and such at the supermarket, you're probably better off going to a farmer's market or ordering online from an actual maple farm if you can find one.
But blueberry pancakes with maple syrup and butter is just classic northern North American "comfort food"... with a big scoop of fried potatoes and a couple of fresh eggs... damn, I might have to go make breakfast instead of my usual "yogurt and toast"!
It's also yummy in sausage at the time of casing/mixing (if bulk or patties), brushed onto bacon before finishing it in the oven or broiler, or similarly for ham.
Mixed with spicy paprika, garlic, onion, salt, sage and tarragon, it makes a great glaze for roast chicken or turkey as well.
Then there are cookies! Any cookie that uses walnuts or pecans can accommodate the flavors in maple syrup, just cut back on the white sugar. It works well in frosting for sugar cookies or icing cakes. I've used it in 'poke cake' where it's drizzled on top of a still warm yellow cake that's been poked with a skewer or tooth pick so the syrup runs down into the cake as it cools and leaves little tracks of mapley sweetness. It's good in banana bread too, though that rarely needs to be sweeter.

We make homemade McMuffins with grilled English muffins, round egg, sausage (optional), and cheese.
When I assemble them I drizzle a little maple syrup into the crispy nooks and crannies of the grilled muffins and it is deeeeeelicious.
Note that it's a tiny amount of syrup, not enough to run out as you eat it.
I also put a splash of maple syrup extract into oatmeal as it cooks and it's also fantastic, particularly when the oatmeal is completed with allspice and cinnamon.

But pancakes and friends are so yummy with maple syrup. I make pancakes or French toast a handful of times a year so I have to have a small bottle of syrup just for that!
My family and friends who have kids make pancakes pretty often too. They’re easy, cheap and filling. Not healthy tho lol, just delicious!

Boil the syrup at a high temperature, pour into densely packed snow, wait until it just starts to cool but is still pliable, then scoop it up with a spoon or a popsicle stick.

I make Sriracha maple salmon. The sauce is Sriracha sauce, maple syrup, soy sauce, a dash of sesame oil, minced garlic and chili flakes. I usually serve it with jasmine rice, steamed broccoli, and sauteed onions and mushrooms. It's good. I promise.
