Wasn't the Defiant interior gray? At this point, only the Defiant's bridge was built. The crew quarters set was originally built by TNG as the rear half of the runabout for that late s6 episode. Defiant wouldn't get additional sets until the end of s3.

No the supports between the stations on the bridge were a grey color but most of the walls were a darker tan color, they later used the same color on the rest of the Defiant sets as they built them.

The warm lighting is the design aspect I miss most from TNG. It felt like a place you would actually want to live. DS9 looked more dramatic with its moody shadows and dark sets, and it actually made sense as a Cardassian facility, but then they just went hard on the gray sets and dim lighting. On Enterprise it was somewhat justifiable because it looked like a natural extension of our modern space ships.
But Voyager had no excuse for it, nor did the movies. Dreary gray consoles, walls, and floors with shadows everywhere does not make for a welcoming workplace. Now even fucking Target looks like that. I hate it.
Best thing Disco did was to bring back bright colorful consoles, living quarters that felt like somewhere you'd actually want to spend time in, and shiny floors. The lighting is still pretty harsh in new Trek, but it at least looks like somewhere I could live and not go nuts.

Generations bridge actually felt like a bridge, where actual command and control of the ship happened. The series bridge only had the 3 seats (with those 2 extra seats that nobody actually sat in added later), 3 actual duty stations, and then the 5 stations in the back that often only had 2 people at them. Generations added those side stations like Voyager had, and had a lot more people floating around thanks to that movie budget for extras.

I actually think they were pretty smart with how they lit certain rooms. For example 10 forward having futuristic looking glowing chairs, so it would light the actor's faces from below while the room itself was still dark.

Department stores now feel like they're designed to make you want to get your shit and go as fast as possible so as to not spend any more time there than you need to. They used to go out of their way to seem welcoming, encouraging you to browse and wander to look at merchandise. I walk into a modern department store and I just get the heebie jeebies.

It changed frequently. The side panels were changed for season 2 on, the carpet was frequently changed, the seating left and right of Riker and Troi's seats changed frequently (especially during season 1), and the chairs at ops and Conn were changed after this season (which is too bad because they had an accelerator couch vibe).

It changed in some small ways throughout the series run if I'm not mistaken.
For example, the two small additional seats next to Riker and Troi were frequently changed and sometimes removed.
Also the chairs at the two front consoles were changed to be less low because, irrc, Brent Spiner complained that they were bad for his back.
Also the lighting used for the bridge set was changed around, especially after season 1/2

I like the new bridge in the new tv-series but I think that they are way too big in size. Well, except the holographic ones. How can you read when the display is transparent, although it is handy when sitting in the captain’s chair to have different displays infront of it without a proper console.

It was a partial redress of the TMP bridge pieces. As was the JAG courtroom, multiple classic bridges, and science rooms, but in a different location on stage, connected to the corridors. They didn’t want to have to redo the lighting rigs for the new show, to save money, so Robert Justman and team had to make the D’s bridge fit in the lighting constraints.
I know for ST:V they build a new Enterprise-A bridge, and I’m unsure if it was placed where the D’s was for filming or not.
