I need ideas as I admit I'm in a rut. Bored of expensive take aways and microwave meals. I can follow basic recipes and once I start I enjoy cooking.

Bruschetta! Sounds posh but dead easy - had some reduced sourdough needing using so made cannnelini bean bruschetta by mixing cannelini beans with lemon juice and olive oil and mashing them and then made one of fried courgettes with garlic, lemon juice and oil. Getting parsley in a minute. Had cheesy chips with gravy last night for dinner and that was best meal ever.

Pasta bake with turkey mince, seasoned to taste like spicy Italian sausages. Worked perfectly and honestly couldn't tell the difference (we've done it with the sausages before). One of our easiest but best tasting regular meals. Kind of like a lazy lasagne.

We were in the same position as you so we tried Gousto, they have great introductory trial offers so work out pretty cheap for the first month. But we carried it on after the trial cause we love it so much. They have loads and loads of different recipes which are always changing and they are really simple to follow. (We also tried Hello Fresh but didn't like it as much as Gousto)

Some of my go-tos are - Fried rice, great for chucking in whatever available and having different options for the same easy meal Pasta sauce, this is a comfort food for me, really easy and cheap to make, it's like 4 ingredients for the whole meal including cheese and pasta. Great for having leftovers too. Cottage pie. A bit more time consuming to make from scratch but still easy. I put five beans and peas in, I also like to make the mash with sweet potato and carrot as well as normal potato, so it's like a 7 veg meal. Again, it's great for leftovers. Lasagne. Again, a bit longer to cook but I do make it all from scratch, premade sauces make the process quicker. Leftover Pasta sauce works well for lasagne :-) Chicken Korma. I can't eat takeaway korma anymore after learning to cook it and getting used to a homemade version. Making curries at home is great because you can adjust spices to your tastes. Great for leftovers Omlettes. Great for chucking whatever in as a filling and getting variety out of one meal.

Last night was a lazy quick dinner, Tortellini, vegetables (frozen peppers, frozen diced onion, and frozen mixed veg, all sautéd off in a pan with garlic) and mascarpone sauce.  We've been doing a lot of bulk meals (cook for 4, eat 2, freeze 2) in a bid to eat better and have less take aways. So tonight is leftover "viral" Boursin pasta. You can Google it but essentially take a Garlic Roule (or Boursin) and bake it in an oven dish with tomatoes, spinach, mushroom, and onions (add or subtract veg as per your preferences). I also added cooked smoked sausage (but I'd use chicken or bacon next time). Once done after about half an hour give everything a mix and a bit of a mush together, add a small amount of stock to make the sauce a bit more liquid. Cook a carb to instructions. We did pasta but it would work with rice, mash, a jacket potato. Or on its own in a bowl with a salad on the side.

Cube onion, courgette, pepper, aubergine and pop on a baking sheet or in a lasagna dish, tossed around with a bit of oil, salt and pepper, into a 180-200° oven. After 20 mins, give it a stir, then put slices of halloumi on top and back in the oven for 20 mins. You could also stir in some pesto or harissa or some other nice flavoursome paste before adding the halloumi slices. I eat this sheet pan style meal at least once a week and it usually lasts a dinner and lunch the next day. If you need a carb, microwave a potato for three minutes then out in the oven at the same time you first put the veg in. Or include cubed potato or butternut squash on the sheet pan

I don’t have a specific meal but my recommendation is to go to a charity shop and buy 5-6 actual psychical recipe books that look good to you and keep them on a shelf in your kitchen. Scrolling through recipes online is not the same as flicking through a book in your kitchen, as you need to know what to search for, and so man recipes are bloated with content, and Lord knows how many are now AI generated.

I had a sous vide chicken breast (at 63°C, then seared) coated in a spice paste of smoked paprika and chipotle powder. Diced it up to mix with the spice paste and then popped it in a couple of wraps with some rice, salad, cheese and sour cream.

Lately I’ve been keeping it simple for tea. One easy thing I enjoy is stir-fried vegetables with rice or noodles - it’s quick, cheap, and you can change the veggies or add eggs or chicken if you want. Another good option is pasta with a simple tomato sauce and some garlic. Cooking simple meals like these can actually be relaxing once you get started.

I made minestrone soup from scratch - onions and diced potatoes, sautéed in some olive oil, then diced carrots, peas, sweetcorn, celery and tiny pasta stars cooked in stock for about 10 mins (I actually ran out of stock so used veggie gravy granules). Added thyme and oregano and chopped up a hard boiled egg each in it once ready. Bit of bread and butter on the side. It was a tasty, easy mid-week meal that is the one successful way to get carrots into my child.

Cheese on toast (gluten free). Just sharing this so I can rant about being coeliac. Planned to pick up gluten free fish and chips on the way home from watching a movie (too late to cook) but the place stops cooking gluten free food at 8pm but they continue cooking regular food until 9pm. I didn't know that so went home in a sulk so cheese on toast was the only quick option as it was 9pm by then. This is not my usual tea! I usually cook. I'm just fed up of having no safe convenient options when out. Rant over!

Do you have a slow cooker and eat meat? If you put a joint of beef or pork in the slow cooker, add spices amd seasonings along with stock or apple juice, leave it for 6-8 hours and it's pulled beef/pork! Its so easy and lovely. You can freeze portions and microwave it with bread, mash, rice or pasta etc.

Beef casserole & mash Serves approx 3 large portions: 400g lean diced beef 350g diced swede 3 medium carrots chopped into small ish pieces Good amount of frozen diced onion 5 cloves of garlic chopped 500ml beef stock (knoor stock pot rich beef) 2 tsp garlic granules 2 tsp mustard powder Few splashes of Worcester sauce Salt & pepper Olive oil (spray bottle best to ensure not too much) Casserole dish with lid MAKE MASH POTATO ON THE SIDE 1. Brown beef in olive oil in pan 2. Whilst frying chop carrots into small pieces (2cm?) and chop garlic 3. Remove beef into glass casserole dish 4. Fry pre chopped onion, pre chopped swede, garlic and carrots to pan with a tiny bit more oil 5. Whilst frying make 500ml beef stock 6. Remove from pan and add to casserole dish 7. Add stock to casserole dish 8. To casserole dish add mustard powder, garlic powder, salt, pepper, and Worcestershire sauce and mix in well 9. Put casserole in oven covered with lid for 1.5 hours 10. Whilst cooking make mash

Tonight we made fajita pasta. Basically cook your chicken, onions and peppers with spice as if you're making fajitas, but boil up a load of pasta as well. Mix it all together with a bit of the pasta water and some creme fraiche, sling some cheese on top and you're done.

Homemade burgers. Probably do these once a month. Sometimes I put the effort in. Tonight wasn't one of those occasions... Easiest possible version as I was knackered. Chuck chips in the airfrier and some corn cobs in a pan. Stick a pan on to get hot Open a pack of 12% beef mince, split into 3 balls and squish flat. Season both sides more than you think you should. Place in pan. Turn half way. Dump some cathedral city on top (enough to disguise half arising the burgers), tablespoon in water in the pan, lid on top and steam until cheese melts (10 seconds or so). Build burgers and eat. That's my your kitchen out but they're way tastier than shop bought and can be on the plate in 15 minutes

Google wishbone kitchen swamp soup. I make it differently to her - Boil some rice and cook some chicken breasts / thighs in the oven. In a large stainless steel or enamelled cast iron pan, add a few cloves of garlic, most of a pack of ginger, spring onions, chillies in a pan with some oil, season with a little salt and pepper, sweat them off. Add a big bag of spinach, 100g of parsley and a chicken stock cube (I like the jelly ones) and a little bit of water. Add a little more salt. Use the immersion blender to blitz it in the pan. Add a little more water and blitz again if needed. Shred the chicken breasts, add the cooked rice and more water as needed. Ladle in to bowls, and before serving add a little EVOO, a really good squeeze of lemon juice and a couple of teaspoons worth of soy sauce. It’s amazing, doesn’t take very long and is really easy.

put some jasmine rice in a rice cooker. dice an onion, put it in a pot with a bit of oil. add some garlic if you're nasty. after the onion and garlic are browned, add 300ml of water and half of one of those S&B golden curry blocks. stir that together for five minutes or so, then fry some bacon spam cut into squares. spam katsu. don't knock it 'til you've tried it.

I had homemade lasagna but when I need something quick though, a vegetable curry is my go to. Frozen veg, Curry jar with seasoning powder in the lid Pilau rice or naan bread. And meat if you want, but just follow the instructions on the back of the jar 😉

I quite often do fajitas as a quick easy and cheap meal - onions, peppers, [protein of choice] cooked with paprika and cumin (maybe garlic powder / whatever other spices you might wanna jazz it up with) Then whack it in a wrap or make it a plate with some rice and dress it with some sour cream / cheese / lettuce / salsa / avocado I’ll also sometimes extend the left overs with a tin of beans and a tin of toms to turn it into a chili My gf teases me because I make it all the time but I just like how flexible it is for creating a few different (but admittedly v.similar) meals

I had some leftover veg and a couple of sausages. So chopped them all up, mixed with some noodles and beansprouts, a nice dollop of crispy chilli oil mixed in with some ketjap manis and a sprinkle of spring onions. Was rather nice considering I had no idea what to make for tea.

Meatballs in a tomato and basil sauce with spaghetti. Didn’t have much of it as I’m having an IBS flare up but my daughter enjoyed it. The leftovers have gone in the freezer. Having bangers and mash tomorrow night, I shape the mash like a hedgehog with cut up sausages for the spikes. We have it with vegetables and gravy but it goes well with baked beans instead.

Easy tea tonight.  Went to Tesco.  Got eggs. 4 pack burger buns. Bag of Shredded iceberg lettuce. 11 pack german sausage slices.  Crack 2 eggs into jug, whisk.  Hand full of lettuce, whisk.  Heat oil in pan, pour egg and lettuce into pan. Keep it vaguely burger bun shape whilst it initially cooks.  Flip when underside is brown.  Whilst second side cooks, lay a slice of German sausage on.  Cut the bun open.  Grate cheddar cheese on to the bottom bun.  Once egg is all cooked through, slide onto the cheese.  Squirr of BBq sauce or Tomatoe sauce etc.  Put the the lid of the bun on. Done.  I usually have 2 but sometimes just 1 with some fries.

Did a chicken stir fry with noodles and veg from the cool drawer, made my own sauce for it, so nice and healthy. Dark Soy, light soy, sweet chilli and a splash of red wine vinegar and white pepper. utterly delicious. Good to use up things before the weekly shop. And very delicious. Fry the chicken strips in sesame oil.

Meatball subs! Pork and beef meatballs in regular Bolognese sauce, on a toasted ciabatta with melted mozzarella on top 🤤 Tomorrow we are having crispy chicken, teriyaki sauces rice, roasted broccoli, and maybe some duck spring rolls if I find some in the freezer! I have a chalkboard in my kitchen with my meal plan written out for the week. Helps me to know what to buy and stops decision fatigue in the evening, also means we don't just end up with pasta or chips 3 nights a row!

Chilli con carne. Very easy. Mince, beans, tomato, spices and your choice of carbs. Can scale it up and freeze portions to reheat in the microwave later, if wanted. Lasagne, basically the same thing, just arranged differently, lose the beans, add pasta sheets and white sauce. Satay chicken - chicken, coconut milk, peanut butter and mostly curry powder and other seasonings.

Tonight I made peri peri pulled pork with coriander served with rice, sour cream and baby plum tomatoes. I put the pork in the slow cooker this morning so all I had to do was boil rice and plate it. If you’re cooking for just yourself portion it up and freeze it. You can serve it with jacket potato and salad, in buns with homemade wedges, with mash and honey glazed veg. I have 3 hungry males in the house so no leftovers here!

Usuals in my household cottage pie, chilli con carne, chicken curry, spaghetti Bolognese, chicken stew, cheese pasta bake with broccoli, pies mash & veg, sausages especially the ones with Bramley apple with mash & veg, Carbonara. Frying mince off & adding different sauces you could essentially meal prep for 3-5 nights of food so u haven't got to cook every night, works well if you're lazy & cba. We had maccies tonight & some dipstick forgot to put my nuggets in the bag 🙄

Chilli flakes can vary a lot in heat so you can end up with either bland or blow your face off when you don't intend it. The same amount of sriracha is always the same amount of heat. Green olives work fine in this.
