Chips, cheese and gravy was the finest dish at my secondary school in the 90s. North west England. And no, it’s not like poutine. It’s made with grated cheddar, not curds. And it’s bloody delicious. I’m in my 40s now and it’s still my favourite comfort food

Grey Peas and Bacon is a fairly Black Country dish. It's not quick the 'peas' come dried and need an overnight soak before you even start. Very tasty though, always a treat when I was little.

I've never seen much outside West Coast Scotland but pizza crunch. Local chippie where I grew up did a decent pizza anyway but then deep fried it in batter. Like deep fried mars bar, the textures are the best bit. Down south, lardy cake is something I'd like to see more widespread.

Specific to Edinburgh... At the chippie you'll get asked if you want salt and sauce. The best way to describe it is a vinegary brown sauce. It's a love or hate thing. They will do salt and vinegar but it's not the standard.

Pease pudding is a sort of mass of mashed peas traditionally served with boiled ham (and made with the water from the ham). Fun fact, the name is a relic of when the singular of the small green legume was "a pease", before "pea" was backformed.
