The advantage is that your chicken is not going to walk out over time while shooting - which can definitely matter for LEO/MIL, especially since the chicken it comes with will more than likely work fine with 00 and slugs, which is probably all they need, but I don't know anything about non lethal rounds, but also I suspect those don't cycle semi auto anyway.
For the regular user, IMHO, the ability to change chokes is a nice advantage even if it means having to check that the choke is tight before and after a shooting trip.
But also, if you're planning on only shooting 00 and slugs then... 🤷🏻♂️

I think the best load for drone killing is heavy bird shot. Something like BB or BBB. Most amount of pellets that have enough energy to destroy a prop. 00 buck only gives you 9 pellets

Interchangeable chokes let you swap out the last bit of the interior of the barrel so you can adjust that final bit of constriction to influence how the shotgun patters. Thats basically always preferable as they can greatly improve performance by finding the choke that does best with a given gun and ammo. That said the benefits are more for sport shooting (clays, hunting, competition) where really consistent patterning is more crucial. If you just want a defensive shotgun and plan to run only buckshot and slugs then a fixed cylinder choke is going to work perfectly fine (and a lot of modern defensive buckshot is set up for cylinder anyway). They also remove the chance of the choke walking out as you shoot but so does a $5 bottle of grease.
Tldr: Interchangeable chokes are great but not necessary for a defensive shotgun.

That’s the kind of stuff I was alluding to when I said a lot of the newer defensive loads are set up for cylinder chokes. Ammo makers, particularly Federal, are doing astounding things with wads. I don’t think enough people realize how much innovation ammo makers have been doing in the last decade or two.
