What do you use to automate IT tasks?

Since several people are mentioning powershell, and you mentioned having proficiency, I'll instead focus on the deployment and management. We leverage powershell heavily in some areas, but we split it up into 3 main categories I would say. AD Hoc fixes, proactive remediation and administrative automation. For AD Hoc fixes we leverage a DEX solution where the admins write powershell scripts and make them available to the Service Desk for repetitive JIT fixes. This saves the admins having to login for escalation tickets, because the service desk can run them when they need them. Sometimes these fix issues, other times they gather data and log it to the DEX console for deeper investigations. The key thing here, is these rarely change since they are all purpose built. Very little management involved. For proactive remediation scripts, these run in Intune either as platform scripts or remediation scripts. These are meant to be fully autonomous and run based on the designed schedule. Either things we know need set/fixed or things we want to make sure dont get changed. Again, these dont change very often, so little management here as well. For administrative automation, this can range from tasks in exchange online and M365 all the way to azure depending on role and use. The team all has access to the git repository where it lives, and we all review each other's code. Some of our scripts are for specific scenarios and occasional fixes where we dont want to remember the steps. However, the real power has been when it is linked into azure automation or azure logic apps. Azure Automation scripts run on a schedule whether it is in the infrastructure or the cloud. Logic apps are mostly called via webhook from our ticketing system. This can be group membership changes or the Onboarding/ offboarding process. These also dont change very often. For us it mostly became a matter of empowering the team and getting all our admins powershell training and practice using Github and code reviews. Now its just a part of how we work, with automation as our first choice. Unless its a one time fix, we build the automations from the first step. Hope that helps! Good luck!
