Its a key ingredient of mirepoix, so Id imagine a lot of people would have to adjust their recipes.

It's a key component of the Italian base to everything called the soffritto. I think anyone who likes a good Bolognese or lasagna would disagree that we wouldn't miss it

I like celery. I try to up the veg intake (as generally not a fan) so celery, cucumber and carrots are great to slice up into sticks as have as a snack.

I use it chopped up as a base with onion when making soup. I don't like it as a salad vegetable though but I would miss it.

I always have it in my fridge. It goes into stocks, soups, stews, stir fry, salads and makes a great snack too. It adds a great background flavour to many dishes.
