Should the national minimum wage be a thing?

Been seeing a lot of info saying some professional jobs are equal or just slightly higher paying than MW retail and hospitality jobs.
A lot of countries don’t have it and it creates a real incentive to upskill, it would also make a lot of things cheaper like food, services etc if the free market decided the wage rate.
Just wondering if there is any interesting research on NMW in the UK.
Not necessarily for or against it, but just curious what people think.
