You have opened up the floodgates too much allowing condiments. The definition is so vague you can potentially argue a lot of things are condiments. The cambridge dictionary defines a condiment as >a substance such as a spice that you add to food to improve its taste Cheese sauce, yeah can count it. Ketchup, counts. Curry sauce, yep. Bacon in a blender pureed into a paste I choose to say it is a condiment.

Pretty much indefinitely I think - potato is surprisingly nutrient-dense and the small amount of protein is contains is of very decent quality for a plant protein. I've done "the potato diet" and it's Basically Fine but a surprising amount of faff to peel and cook 2-3kg potatoes for every day.

I did the potato diet once following the rules that Penn (from Penn & Teller) laid out in his book. Its about changing your tastes by eating the most bland food to remove craving for sugar, caffeine etc & to appreciate taste when you come off the diet so eat healthier. Its for 2 weeks, eat as much potato as you like but nothing added - no herbs, can’t cook with oil, no butter. On day 10 I fainted, wouldn’t recommend.

Probably longer than expected, potatoes are surprisingly nutritious and very filling. I think boredom would set in long before anything else, even with different ways to cook them.

Depends what it is you can do with them. Are they just literally potatoes boiled and mashed, or are you allowed to add butter, herbs and other spices? There's a LOT you can do with a humble potato if you can add a few more cupboard bits and bobs to them.
