Thinking I might go a bit veggie for a while. What's your go-to, quick and easy, wallet friendly salad?

One of the best salads I ever had was hot smoked salmon, courgette ribbons, rocket and mandarin segments. The combination of textures, sweet, salty and sharp was incredible.

Missed the veggie bit - sorry. Courgette ribbons though are worth a try for a texture change. Taste isn’t really much to right home about but definitely add something.

One of main ones too. With rocket or spinach for the greens. Pomegranate seeds are a good addition. No dressing is really needed, but a basic herby vinaigrette (the usual olive oil, balsamic and dried herbs) can make the items stick together a little more to make them easier to pick up on a fork.

Giant couscous with finely chopped red onion, mint, parsley, crumbled feta and lemon zest, with a dressing made from the lemon juice and olive oil. Toast off the couscous in a dry pan for a couple of minutes, moving it around so it doesn'tburn. Boil the couscous in salted water as its actually tiny pasta balls, for about 7 minutes. When cooled, add the chopped herbs, onion, feta, lemon zest and dressing Another favourite is chickpeas and sliced courgettes. braised in sherry or white wine vinegar. Fry courgette slices until slightly crispy, along with finely sluced red onion, add in the chickpeas, add a big glug of preferably sherry vinegar. Let bubble and reduce. Once cooled, add in chopped iceberg lettuce, crumbled feta, and chopped sundried tomatoes

The best advice I got about salad is to chop everything as small as possible. That way you get lots of flavour and it's easy to eat. My go to is cucumber, celery, gherkins, olives, peppers and red onion. If I want protein I'll add chickpeas but these can be quite tasteless, so instead I boil the chickpeas with a pinch of baking powder. This softens them and makes them easy to mash. I drain and mash them with a bit of marg, then mix in the finely chopped veg. I either spread it on bread or eat it from a bowl.

Grate loads of carrot, sprinkle with salt, add a few drops of toasted sesame oil and stir. Absolutely the easiest salad which tastes incredible. I usually put it together to eat with gyoza and edamame from the freezer. Pretty much a full meal in 5 minutes.

* jar of brown lentils * jar of white beans * blanched French/ string beans * capers * Caesar salad dressing with loads of lemon juice. Parsley if you can be bothered. Easy store-cupboard salad, make the dressing while you blanch the beans.
