Chitlins; I used to love this as a kid. So much for nostalgia of food I used to like. I forced myself through eating half of it and dumped the rest. Now I feel nauseous.

Intestine can be really good but it needs to be seasoned with quite strong flavors/fragrances. This is just boiled with hot sauce? That cant be good, and this is coming from someone that loves bbq intestine in korea/japan.

I always hated cleaning them as a kid but the best part was being in the kitchen with my late grandmother. She seasoned them perfectly. I may try them again if it’s Korean or Japanese style, but all I did was to buy a precooked container thinking that would be all I needed to do was to heat them up. I was sadly mistaken.

I had pho with tripe once. IDK i'm sorry to say it tasted like butthole. And that's fine if you want to eat butthole. Sometimes I like to eat butthole but I just prefer it be recreational rather than for nutrition. I can't imagine chitlins are much better.

Thats how I feel about tongue. I had this one dish of tongue at a Thai restaurant and the sauce was heavenly. But the tongue was like a whole tongue just in slices and it literally felt like I was making out with a cow while I chewed. And I have had thin sliced tongue at kbbq but it still has a very distinct almost sharp texture that I can’t stand.
View on Reddit #73973923

notabigmelvillecrowd@reddit

Hm, that's surprising, I find it really similar to lean steak in texture. It is just a muscle after all. Quick cooking like grilling it needs to be sliced thin, because it's lean and can be chewy, but slow cooked it's soft like stew meat.
View on Reddit #73977249

hahagato@reddit

The Thai dish had the taste buds and all. And when it’s thin sliced it is like lean steak but with weird prickly bits. I am hyper sensitive to everything but especially textures so it’s very… weird haha.

Oh, I've eaten tongue many times, in many different ethnicities of cuisine, but it's always been peeled. I think the tastebud texture might squick me too. The first times I had it were horrendous as well, boiled by my British nan, so I can relate to having a bad experience to start. I would say don't write it off based on what you've had, it can be spectacular when done well.

I love chitlins. It was something that no one else in the family shared his love for except me, and it was later in life when he started cooking about 300 lbs a week for my aunt and uncle's restaurant. He cooked them over a fire in a kettle outside. I just made some for Thanksgiving. You gotta parboil them, clean and pick them into bite sized pieces, then boil them again in fresh water. I cook them outside and pour the first boil outside because it will clog your pipes since it's basically lard. It takes me hours but well worth it to me. I just season with salt and hot sauce, as most people do, and serve with vinegar slaw, white beans, fries and white bread. Most people prefer them fried which at the restaurant, is done with a wet batter and they have their own chitlin sauce which is mainly ketchup, Jalapeno vinegar, black pepper and brown sugar. Once again, I love chitlins. I've cleaned thousands of pounds in my life. I don't work in restaurants anymore and they're crazy unhealthy but I still like to have them once or twice a year.

When my grandma would cook these, me and my cousins would leave the house for the entire day until the street lights came on. Literally jump on the bus and go as far away across the city as we could get, just so we wouldn’t catch the after smell.

I like the Chinese boiled versions with lots of peppers and spices. Crispy fry is the best with some sweet and sour sauce. Just learn to clean better next time, it's usually Chinese cooking wine or beer to scrub. And you can even boil/cook them to get rid of impurities/smell.

If you don't know how to clean/cook them (me) or you don't have a person you trust that you know for a fact can clean/cook them, then just don't eat it. Oooooh I love intestines. In Chinatown where I stay, they do a deep fried version and do a sweet and salty spice mix on top. The soft interior with the crispy exterior makes for a GREAT dish. Organs meats need a fair amount of aromatics to cook with, especially tripe, intestines. This specific way of cooking, one you showed, looks gross but if you tweak a few things, you could maybe revive your love for Chitlins!

Sour tripes (a very well known regional dish from where I live) 5 onions Fat 100 g Tripe 800 g tomato paste flour 0.75 liters red wine 3 bay leaves 4 juniper berries a little lemon zest meat stock as needed salt and pepper red wine vinegar 1. Sauté the chopped onions in fat until translucent, then add the sliced tripe and fry briefly. After a few minutes, add a little tomato paste and sauté it briefly as well. 2. Dust with flour and deglaze with 1/2 liter of red wine. Add the bay leaves and juniper berries, then add a little grated lemon zest and let the tripe simmer gently in the sauce for 1/2 to 3/4 of an hour. Once the tripe is tender, add stock and, if necessary, the remaining red wine. It should not become a soup—only add enough liquid to achieve a goulash-like consistency. Season to taste with red wine vinegar, salt, and pepper. 3. Serve with fried potatoes and a green salad.

Cut into rings like Calamari, rinse and soak in salted water. Rinse again, marinate with soda or lime or mashed garlic and ginger. Dry with cornstarch, make a mix of cornstarch, baking power 1tsp, vodka, dry herbs, carbonated water or tonic. Poder with cornstarch then put in the dredge. Deep fry @ 400. Like Calamari.

Boring story: I was in the big grocery store today looking for chicken hearts, because I have already learned they are not sold in the small grocery stores. I found all kinds of giblets and chitlins and livers. Found lots of poultry; duck, pheasant, pigeon, goose... Found boar and venison and Buffalo and elk. At that point I was expecting to find squirrel meat. I did not. Just like I did not find chicken hearts. My point is, take a closer look at what you think you don't care for. Some day you could spend hours in grocery stores searching for that specific nostalgia.

There are way way better ways to eat pig intestines I’ve learned from living in Japan. Check out motsunabe if you ever get the chance. Or anything to do with horamon. There are also restaurants that specialize in grilling it. I used to hate chitlins…. But I can eat it in Japan. It’s down to the preparation… there’s so much fat in them, it’s so heavy. But trust me, try it in Japan someday.

I’ve never had chitlins before (only pork large intestines) but if it’s anything like it, it needs to be cleaned extremely thoroughly otherwise it’ll taste foul and no amount of spices, sauces, whatever will mask it.

I grew up eating tacos de tripas when my dad would bring home a pack from a food truck or he'd make some on a little welded griddle outside with a fire underneath, love when the gritty(?) stuff on the inside is still there and it's super good. This looks really boiled and gummy, ya gotta cut em into little tubes and fry it so it's all crispy and easy to chew.
