What is your favourite curry in an Indian Restaurant?

Very many restaurants have a 'signature flavour' that most of their main courses share. If you like their signature, you'll like most of what they do - each will just have a different feature; obviously swapping chicken for lamb, but dopiaza will be loaded with onions, ceylon adds a slight sweet/sour, madras extra chilli powder & tomato purée. Some change depending on where in the country you are. 30 years ago a Birmingham balti was essentially the same thing as a Bradford karahi - they've since merged, to such extent that you can now order a karahi balti (which frankly makes no sense ;) Both are just the original regional name for the dish it is cooked in, neither actually describes the food in it. There are other regional differences. In Bradford a jalfrezi features egg. In London it features green chillies. they are completely different dishes, sharing one name. It's not that complicated. You can't make an entire curry in 10 minutes so all their sauces have to be pre-made, with the specific features added during a quick re-heat.
