stuffing is evil. The raw turkey juices soak in, so that means for it to be safe to eat, the center of that stuffing mass needs to hit 165 degrees. That means your turkey has to cook longer and the white meat is going well over 165. If you want turkey flavor in your stuffing, bake it separately, and when your turkey comes out make a gravy, or pour the juices on your dressing and cook it a little longer to dry it out a bit.

If inside the bird isn't an option(like for a spatchcocked turkey), just make stock the day before with the neck/tail for use in stuffing and gravy, and use a little extra liquid for the stuffing compared to what recipe calls for to get that wet texture of what comes out of the bird.
Also, fun extra tidbit, use some white wine in place of 1/4-1/3 of the stock.

155 for 1 minute, which I don't know of anyone that isn't cooking the bird to at least that. Just temp probe the breast and stuffing cavity to ensure both got to the same desired temp, and no concerns. Too many people overcooking their turkey by pulling it at 165.

But you still shouldn't do it because all that bread acts as a sponge and pulls moisture out of your turkey making it dryer. Stuff your turkey with things that add moisture instead like onion, carrot, celery, and lemon.

It doesn't need to be a bird. Just a cavity including things like poultry, vegetables, and seafood. We do stuffing in peppers and cabbage. Then we remove the stuffing and chop up the vegetables to serve separately after mixing them with caramelized onions and some baked garlic.

Here’s how to have safe stuffing. Line the turkey cavity with cheesecloth. Stuff the bird and roast to the correct temp. Remove the stuffing, mix with more of the seasoned bread mixture, put it in a casserole and bake until hot and crispy. You could add some egg if you want it to hold together a little better. You get turkey seasoned plus delicious crispy bits.

Pasturization happens well before 165, you can pull poultry closer to 155 as long as its been at that temp for like 2 minutes, Google a chart that shows you at what temps/for how long it take for pasturization to take place. 165 guarantees it's going to be safe but if you want super tender and juicy poultry you want to pull it before it hits 165.
I actually just googled really quick, as long as it gets to 155 and stays there for 47.7 seconds, it is 100% safe, so those juices will more than likely be negligible, as people have been stuffing birds for 100s of years and I personally know no one who has gotten sick from that

Ive worked in restaurants for 30 years and never even considered this. Ive never stuffed my birds either. Your right. Adding the stuffing to the raw turkey makes you having to cook it longer and over cooking the meat.
Might be ways around this. Ive always heard you should baste the turkey every so often to prevent this. And injecting its own juices back into it during cooking could help also.

My mum still does stuffing the old fashioned way inside the turkey. It's just about cooking it for much longer at a lower temperature under foil, then in the last hour removing the foil and upping the temp to crisp the skin. Never comes out dry, the foil steams it.

It's not conjecture. Once the stuffing comes in contact with the poultry juices, it has to be heated to the same temps for safe eating. It's a function of time and temp. There are charts for this. Example: poultry cooked to 165 for like 5 seconds is safe to eat according to the FDA. You could also do like 5 minutes at a lower temp and get a moister bird.
Would you brush your dressing with raw poultry juices and say it's conjecture to state that the dressing is still safe to eat without further cooking? That's what you're doing when you stuff an uncooked protein with your dressing.

You can also heat to a lower temperature, but it keep it there for longer to kill most of the bacteria. I think 149 degrees for at least 10 minutes is good enough for most people, provided they are relatively young and healthy. I don't take the risk myself, but that's just some info. 165 is the temperature at which harmful bacteria are killed instantaneously. It's the universally safe number, which is why it's the suggested by food safety guidelines.

I thought it was 15 seconds at 165, but it's been a minute since I was pasteurizing milk at home. I thought it was ultra pasteurization, or UHT that takes a couple of seconds. We would heat treat colostrum at 130F for 30 minutes, just to give another option.
Regardless, getting something to 165 does probably mean it's been there at least 15 seconds by the time you get your thermometer in there.

In-turkey stuffing is actually the main cause of food poisoning cases being reported at 500% on Thanksgiving and the days after by ER's. Either your turkey is dry and overcooked or the stuffing is raw and full of raw turkey liquid. The center takes too long to reach temperature.
Im not saying your stuffing was raw, but if it wasnt your turkey was wildly overcooked. Its good stuffing and bad turkey or good turkey and dangerous stuffing. Just use the stove top stuff, its better anyways imo.

I used to think stuffing the turkey was completely unnecessary. My friends family always served both stuffing from the bird and baked in a separate pan. The stuff from inside the bird was noticeably better. Not enough for me to go through the trouble of taking the stuffing out and heating to temp and whatnot, but it did make a noticeable difference.

It is. I spatchcock my birds and use the neck + back + giblets to make stock. Then use the stock to make the stuffing and add drippings + homemade turkey gravy after baking it in the oven. Most of the flavor in stuffing comes from the stock, so if you use generic store-bought stock (aka mildly flavored water) of course you will get a lackluster result.

I cook my birds unstuffed and make the stuffing in the crockpot with homemade turkey stock. Before I make the gravy, I ladle some of the fresh hot drippings over the stuffing. Tastes just like it was cooked in the bird.

If you're the kind of person to break down the turkey before plating, then it's better not to truss the turkey legs.
If you tie everything together, then the leg meat is pressed up against the rest of the bird, which makes it take longer to cook. If you don't, then the legs get to a higher temp by the time the breasts are done, which is what you want. It's the same reason why so many people spatchcock turkeys.

I mean, ppl still inject their turkeys w stuff. You can use a bag. Or the old-fashioned method of bastin your turkey. However, bastin your turkey also sometimes leads to dry turkey. Every time you open up the oven it gets 150°F lower draggin out the cookin time. Also bastin your turkey can help w juiciness but no crispy skin on the top just soggy skin.

You eat with your eyes first. That's not an incomprehensible concept, I hope. "Food" as a general subject has a lot of tendrils informing how people will react to it. No one knows how it tastes. All that can be gleaned from this picture is that the skin is either crispy from roasting or leathery from being smoked (I'll give you the benefit of the doubt and assume the former). It otherwise does not look appetizing, but that's not a confirmation that it doesn't taste good. I'm sure it's fine.
But yeah, that's why people aren't jumping to compliment your turkey based on that picture.

This is like one of those videos on youtube where there are three levels of cooking proficiency. This would be the basic one.
The skin probably tastes amazing but I'm willing to bet the white meat is dry and the dark meat is soaked in fat, and if the dressing is in the cavity it may not be safe to eat. Although in this case letting the legs splay out may have helped heat get into the dressing. So two mistakes kind of cancel each other out.

This turkey isn't messed up at all. That's exactly how my entire family loves the skin. It's entirely possible. To have the skin super crispy and the meat still super moist and tender. Get over yourself, and move on. Your way is not always, and likely rarely, going to be "the right way". Good food is entirely subjective.

Also one pro-tip if you didn't know. You can put tin foil over the turkey to keep it from browning. Towards the end you can take the tin foil off to let it brown. That way you can control how light or dark you want it.

OP I think where you went wrong here is that you didn't tie the legs together and so having it spread eagle looks a little weird for a turkey. Also I would have pulled it out a little sooner, definitely a tad dark but looks like it would still be tasty. Baste more though you want that skin to shine!

I think it's just the way the legs are sprawled out. If you use butcher string to tie the legs together to keep them toward the center, it would look better. The breast of the turkey cooks the slowest and since it takes hours to get it fully cooked, the thinner areas of the turkey(legs) have the potential to be overcooked. When you tie the legs in, closer to the body, it helps to ensure that all the meat on the turkey will cook more evenly.

Nope. Super simple rub of paprika, salt, pepper, poultry herb seasoning, garlic, and onion powder. Mixed into softened butter and garlic oil. Rubbed under skin and roasted.
